24.01.2022 In the aftermath of the Crown Heights riots in 1991, Mayor David Dinkins met with the Lubavitcher Rebbe, seeking his blessing and advice on how to best move forward as a city. The Rebbe expressed his hope that Mayor Dinkins would be able to bring peace to the city. When the Mayor added, to both sides! The Rebbe responded with a smile: We are not two sides; we are ONE side. We are one people living in one city under one administration and under one Gd. May Gd protect ...the police and all the people of the city. The Rebbe reminded us of something so basic, so essential, and so crucial. We are all children of G-d. We are all created in G-d's image. We are all unique, blessed with a unique purpose to bring light and goodness to the world. We are all deserving of respect and dignity. Now, more than ever, we need to go the extra mile in helping our one community, our one city, and our one country heal, unite, and move forward kinder and more inclusive than before. 21.01.2022 My mother’s pickles recipe 1 litre size Mason jar with lid. 1/2 kilo Small-medium Lebanese cucumbers. 3-5 garlic cloves peeled. 2 Birdseye chilli peppers.... 2 stems of fresh dill. cup white vinegar. 1 Tbs whole peppercorns. 2 bay leaves. 1 Tbs kosher salt. 1 Tbs sugar. Boiling water to fill up jar. - Pack the cucumbers tightly in the jar, add all ingredients, add boiling water to the top, turnover gently a few times to mix. Cover tightly with lid and stand on window seal or counter for 2-3 days, place in fridge and enjoy! See more

17.01.2022 Focaccia bread: 1 kilo flour 3 sachets dry yeast 3Tbs sugar 2 Tbs salt... 600 ml lukewarm water 4 Tbs olive oil Topping: Olive oil, herbs, Parmesan cheese, sundried tomatoes, olives etc... Method: Place ingredients in a large bowl and kneed into a dough. Cover and allow to rise for about an hour. Punch down and divide into 14 individual balls or make 2 large loaves. Flatten and stretch. Brush with olive oil and topping of your choice. Allow to rise another 20 minutes. Bake on 180 Celsius for 20-30 minutes

10.01.2022 Veggie lasagna recipe 1-2 packs of instant lasagna sheets 500 grams thin sliced mozzarella cheese 200 grams grated mozzarella ... Grated Parmesan (optional). For the sauce: 1 onion 2 garlic cloves 1 eggplant 3 zucchini 250 grams of mushrooms 3 ripe tomatoes or a can of tomatoes. cup tomato paste cup water 2 bay leaves Some basil Lemon juice Salt Pepper Preheat oven to 180. Dice all the veggies and sauté with a little olive oil. Add tomato paste, water, herbs and spices, mix well and sauté for 10 minutes. In a baking pan arrange 1 layer of lasagna sheets, top with a third of the veggie sauce and top with thin sliced or grated mozzarella. Repeat 3 times. Cover with foil and bake for one hour. See more

10.01.2022 BOTH CHEESECAKE RECIPES FROM COOKING WITH ESTI BROWNIE AND CHEESECAKE MARBLE CAKE: Brownie batter:... 1 stick butter (10 Tbs). 1 cup sugar. 2 eggs. Pinch salt. Tsp vanilla. cup cocoa powder. cup flour. Mix all together . Cheesecake batter: 2 cream cheese (500 grams all together). 2 eggs. Pinch salt. Tsp vanilla essence. cup sugar. 2 tbs melted butter. Mix all ingredients together. In a greased and lined pan, pour in both mixtures and gently mix into marble effect. Bake on 180 degrees Celsius for an hour. CLASSIC CHEESE CAKE: 2 pie crust 2 quarg cream cheese large (or JJ cream cheese) ( all together 1 kilo). 1 sour cream (200 ml.) 4 eggs Pinch salt 1.5 cups sugar 2 tbs cornflour 2 tsp vanilla Blend the cheese and sour cream well until smooth, add eggs, salt vanilla, mix the cornflour into the sugar and add to mixture. Keep mixing for a few minutes. Fill pie crust till very top (it doesn't rise...) Bake in pre heated oven 180c, for 45 minutes or until top is golden in centre and brown around edges. Tip: it's good to bake pie crust for 5 minutes before adding the filling.

09.01.2022 Matbucha recipe: 2 kilo tomatoes 1 whole garlic head peeled 3-5 birdseye chilli peppers ... 1 cup extra virgin olive oil 1 Tbs sweet paprika 1 Tbs salt Method: Dice the tomatoes and place in a medium pot. Pour the olive oil into a large measuring cup and add the peeled garlic cloves and chillies, blend with a stick blender and pour over the tomatoes. Add spices and put on the stove on a medium flame. Keep stirring every 5 minutes. Leave on the fire until all water has evaporated, the tomatoes are dark in colour and the bottom of the pot is starting to get charred.... (once you transfer the dip into a container, take a piece of bread and wipe the bottom of the pot and take a bite! Yummmmmm) Enjoy as a dip or as a shakshuka base.

06.01.2022 Yerushalmi Kugel Recipe: 500 grams Pack of thin noodles (number 2). cup Canola oil. 1 cup of white sugar.... 4 eggs. 1-2 tsp salt. 1 Tbs ground black pepper. Method: Cook the noodles according to package instructions, drain and place in a bowl. Heat oven to 180. Place the oil and sugar in a frying pan and heat over high flame, until sugar bubbles and goes dark brown. Pour over the noodles and mix well. Add eggs, salt and pepper and extra sugar to taste. Mix together, place in a greased pan and bake for 1 hour.

03.01.2022 MUSHROOM PIE. Savoury pie base 2 cups flour 1 tsp salt 1 cup sour cream ... 75 grams butter or margarine Combine all ingredients and kneed into a smooth dough. Spread dough in a pie dish, covering the walls. Bake in a preheated oven on 180 for 20 minutes. Add your favourite filling and topping and bake again for 20 minutes. For mushroom pie: 500 grams of button mushrooms sliced. 3 Tbsp milk 2 Tbsp mushroom soup mix. Fry the mushrooms in pan, add milk, add soup mix, salt and pepper to taste. Pour into baked pie base. Topping: 3 eggs 200 ml sour cream 200 grams grated mozzarella. Mix together and pour over mushrooms. Bake for 25 minutes on 180. Enjoy! See more

01.01.2022 Roast zucchini and garlic cauliflower soup: 1 onion diced 1 leek sliced 1 cauliflower 7 zucchini sliced in half longways ... 1 head of garlic 1/2 cup raw cashew nuts 3 tbs olive oil 1 small chilli pepper (optional). Small piece of fresh ginger. Fresh cracked pepper Salt 4 masal chicken stock cubes ------ Preheat oven to 190. On a large baking tray arrange the sliced zucchini and garlic. Drizzle with olive oil and place in oven for 20 min. Meanwhile In a large pot heat up 2 tbs olive oil and add grated chilli and ginger, onion and leak, Sauté until golden. Add 8 cups of water and the cauliflower cut up, and bring to a boil. Add chicken stock, salt and fresh cracked pepper. Simmer until cauliflower is soft. Add the roast zucchini and garlic (remove peel) Add cashew nuts. Turn off fire and purée with the hand blender. Serve with a dollop of fresh cream or some grated Parmesan. Enjoy!
