21.01.2022 Heading South for Winter? Make sure you visit @providorewa... this is a MUST Where do we start? The sauces, the spices, the jams.... oh and the liqueurs Sooo good! This place will have your taste buds dancing! Posted @withregram @providorewa It’s recipe time !! This Pumpkin soup is a timeless classic with a twist. Just add a little spice and coconut milk to take a simple pumpkin soup to the next level. This soup is vegan , dairy and gluten free so ticks all the... boxes for entertaining. Recipe below .. Spiced Pumpkin & Coconut Soup Serves 4 1.2 kg pumpkin, peeled and chopped 1 TBS Providore Korma ,Malay or Butter Chicken spice blend 1 onion, sliced 2 garlic cloves , peeled whole3 cups stock of choice (veg or chicken) 1 cup waterSalt and pepper3/4 cup coconut milk 2tbs fresh coriander ( optional ) 2tbs Providore Dukkah( optional ) Place the pumpkin, onion, garlic, stock and water in a pot - liquid won't quite cover all the pumpkin. Bring to a boil, uncovered, then reduce heat and let simmer rapidly until pumpkin is tender (check with butter knife) - about 10 minutes. Remove from heat and use a stick blender to blend until smooth Season to taste with salt and pepper, stir through spice blend of choice and coconut milk. Ladle soup into bowls, drizzle over a bit of coconut milk , sprinkle with a bit of extra spice and fresh coriander and Providore dukkah if using. Serve with grilled garlic naan bread or papadums.
