24.01.2022 Oh My Goodness how Amazing is this I am growing fresh Oyster Mushrooms which I have never grown before and when you see these little babies pop up all of a sudden at your kitchen window it brings a thrill to my stomach. I am almost frightened to harvest them but I sure will ... I went to an Indoor Market a few weeks back and bought these organic mushrooms that are supplied from the SW and thought to give them a go ... and Wahhh Laaaa here they are ... Anyone have any suggestions with a good recipe for Oyster Mushrooms love to hear from you Will post a future growth soon @dozzaskitchen

24.01.2022 This is a truely hearty meal with all the goodness of all the vegetables and meat in one cook up. A hearty stew is always a favourite in winter or summer with a crusty loaf of bread. Recipe Chop up all the vegetables you wish , chop up pieces beef, lamb or chicken Cook the meat first in large saucepan in olive oil until lightly brown than add vegetables. ... Season salt pepper and fresh chopped chives , basil Chicken stock , chopped garlic, tomato paste, 2 small chilli, olives , 1/2 cup wine and fill with water just to cover all above and then slowly cook for 2 hours. 22.01.2022 Traditions begin here with your parents. I always enjoyed the times we would stop and be making salami, pasta, preserving, baking , cooking and even cutting up our own meat and packaging to freeze. The long standing traditions that were once part of your childhood, if not kept up will sadly no longer be. Mum always enjoyed the fruits of her labour. Always having fruit and vegetables on hand. Ready to bake , cook and preserve anything.... The production line of tomato sauce , jams , fruit preserving and freezing all vegetables that were abundant. Nothing ever was wasted and what was left over went to her loving chickens. I remember mum having a hundred chooks when I was a little girl. Eggs , chicken stock and roast chicken always available. Eggs to bake galore. These days only 3 chickens. They once had a dairy so milk and cream was always on hand. Dad left us 6 years ago and the tradition of making salami sadly stopped years prior. Mum at 88 still baking and cooking in a small way just enough for herself now. Mum recently had a fall in the kitchen and now is hospital. It’s hard to imagine a strong and resilient lady she has always been, now so frail I may not be baking and cooking as much of late as spending time with Mum. 17.01.2022 Another dehydrated favourite of mine using a bucket full of lemons. When the Lemon tree is over producing. I juice them to freeze either in ice cubes for drinks or in small containers for cooking mainly for when my Lemon Tree is not producing as much. The peel has such a beautiful intense flavour. ... After grating all the lemons I made a syrup of water and sugar over a medium heat until sugar dissolved and than placed my peel into the syrup and allowed to steep for half an hour on low . A beautiful yellow intensity and the smell of lemon was amazing. I then drained the syrup into a jug and allowed the peel to completely drain all liquid. I then lined a baking tray with parchment paper and spread the peel out. Preheating your oven on high 200 degrees. I placed the tray into the oven to allow the peel to crisp up stirring often and keeping an eye not to burn. Once cooked remove from oven and allow to cool. Oh My Goodness the crunch and flavour is just so Amazing. Sprinkle over a salad on vegetables , fish etc it is so good. Recipe Syrup 3 1/2 cups water 2 cups Sugar Bring to the boil to dissolve the sugar than lower temperature add Lemon Peel and allow to steep for 1/2 hour . This can also be done with Oranges - sprinkle with cinnamon after baked Store peel in airtight container. The syrup can be used in so many dishes. 17.01.2022 One of my favourite Cakes is a Moist Lemon Cake. A refreshing Lemon Bundt Cake lightly dusted with icing snow. Do you Lemon Cakes! Recipe 8 Oz Butter (226 gm)... 2cups sugar 3 eggs 3 cups plain flour 1 1/2 tspns baking powder Pinch of salt 1 cup of milk 3 tblsn finely grated lemon rind 2 -3 tblspoons lemon juice Method Cream butter and sugar than beat 1 egg at a time , add milk and lemon juice . 13.01.2022 I made Lemonade Wedge Scones this morning visiting some good friends thought I would try these blueberry Wedge Scones today It only took 3 ingredients 400 g SR Flour (sifted) 250 gm Whipping Cream (not whipped)... 250gm chilled Lemonade Blueberries Mix together (do not over mix just lightly until combined ) Roll out and cut into circles do not overwork the dough Brush milk or egg on top on scone to make a shine Flatten dough to a circle and cut wedges through but don’t separate onto a tray with baking paper together so they keep there circle shape ) Bake 15-20 minutes Depending on your oven 180 degrees Until light golden colour. 13.01.2022 It’s clear after all the cooking we do that it’s time for the lovely job of cleaning up the household as well. I not only enjoy food recipes but I do love to make my own non toxic household cleaner recipes as well from plant based ingredients. Some are already made up but I do love to make them go a lot further making them more cost effective. Safe for all my family and friends when they come to visit. No longer do I need to wear gloves and masks to clean from the... chemicals and toxins that are in so many cheaper version cleaners bought at the stores from earlier days. I am so glad I have made the change to ditch and switch out for our household. No more breathing in toxins and for my skin to absorb them. Did you know your skin absorbs so much from so many household and personal products each day. If this is of interest for you I would be more than happy to help you out. 11.01.2022 After a couple of big days of eating and festivities a light salad with cold left over Turkey or ham incorporating some in seasonal peaches , nectarines nuts and seeds. Hoping you have enjoyed your holiday weekend and you have experienced some love peace and joy over your Christmas Day. Praying for some kind of normality as we know it across the globe into the New Year. ... Taking some time to gather thoughts of how to send some love and hope amongst those that are finding this time of year difficult. Many thoughts of loved ones that have also past especially missing my dad right now. Some love or hate the fuss of Christmas but for those that find pleasure in it, especially for the little ones , the elderly and for all of us in between I hope it was all that you hoped for. It’s sad and unfortunate that for many especially this year were not able to spend this Christmas with loved ones due to restrictions. I do hope you found some kind of Christmas spirit to celebrate the holidays. Today I packed away the Christmas lights and baubles. Feeling like it’s been a whirlwind but I did find it made for a special day. I do like to go all out and try and make it the Christmas spirit it deserves and to celebrate and appreciate what we do have. It does take time in advance to plan , decorate , shop and prepare meals even when you try and make it simple there is a lot to organise on this special day and with a blink of an eye it’s over. 07.01.2022 Berry Pancakes for Breakfast always a treat on the weekend or weekday . Especially when most fruit in season. Orange, blackberries, blueberries, raspberry, pineapple, strawberries, kiwi , banana I blitzed into a berry compote, that way he will enjoy the benefits of all fruits. ... Just a cup and a half of combined berries and orange. Recipe 1 1/4 cup Self Raising Flour 1 tblspn Baking Powder Pinch salt 1 tsp Cinnamon 1 tblspn Honey instead of sugar 1 Egg 1 Cup Milk 1/2 tblspn Melted Butter 1/2 cup Berry Blitz 1 Tspn chia seeds Sift all dry ingredients into a bowl . Beat Egg and Milk together with a fork. Stir egg and milk mixture into dry ingredients. Mix in melted butter and honey then fold the berry compote into the mixture until just on runny consistency adding a little extra milk if required. Heat the griddle pan and pour the mixture into small size pancakes Serve with either honey , cream, Icecream or more berry compote. 07.01.2022 When you ask your grandson what do you want for dinner And he responds......pasta So a quick Pasta it is Penne in Tomato and Parmigiana sauce with fresh basil. ... So simple but so yummy. Making a simple pasta dish sometimes just fits in as a quick evening meal after a big day. Using your favourite tomato based tomato sauce. Boil up the penne, drain into a bowl keeping the water. Into the same saucepan back onto the stove, adding in your favourite tomato based sauce. Heat up sauce adding some of the reserved pasta water then add Parmesan cheese and heat through to melt the cheese adding extra water if needed. Throw in the cooked pasta and mix well until sauce has thickened. Season with salt and cracked pepper. Chop up a handful of chopped basil and serve hot. 05.01.2022 Oh My ...Deliciously Good Chocolate Mudcake. When your craving chocolate reach out for a Mudcake and fresh cream. Whilst out about this weekend enjoying the sunshine what better way than to reach out for some local coffee and cake. It was so difficult to choose from the cake stand but Chocolate Mudcake stood out the most. I enjoyed my weekend free from cooking and getting out into the community and supporting our local businesses.
