10.01.2022 Winner winner slow roast Lamb Dinner. I can’t even begin to describe how good this lamb was. Anyone familiar with Botswana Butchery in Queenstown, NZ? Here’s the secret to reproducing the Cardrona Lamb Shoulder in Oz: 2kg Lamb Shoulder 3 Cups Stock - I used Vegetta 1/4 Cup Balsamic Vinegar (next time I would use a champagne or white wine vinegar to reduce the colour)... 6 Fresh Rosemary Sprigs 8 Cloves of Garlic 2 Tablespoons of Brown Sugar Salt n pepper 1 Cast Iron Baking Dish with Lid Place Lamb fat side down into (sprayed) iron dish. Mix all other ingredients together and pour over Lamb (refer to last photo). Bake for 3 hours at 140 deg with lid on. Turn lamb over then bake for a further 2 hours with lid on. Drain off all liquid into a saucepan. Turn oven up to 180 deg and bake for another half hour uncovered. Reduce the liquid by simmering for approximately half an hour (will halve) thicken with a teaspoon of cornflour or potato starch. Continue to simmer for another few minutes to cook out the flour flavour. Serve whole with a spoon and fork... no knife needed, it falls of the bone. Enjoy and Happy Easter from us.
