20.01.2022 Check Out Geraldine’s Favourite Sugar-Free Raspberry Slice INGREDIENTS 1 1/2 cups self-raising flour 1 1/2 teaspoons baking powder... 1 cup no-added-sugar French vanilla yoghurt 1/3 cup rice malt syrup 1/3 cup rice bran oil 1 egg, lightly beaten 125g fresh raspberries 3 x 45g bars sugar-free orange-flavoured dark chocolate, melted METHOD 1. Preheat oven to 180C or 160C fan forced. Grease and line a slice pan with baking paper extending paper 5cm above long sides. 2. Combine flour and baking powder in a large bowl. Stir in yoghurt, syrup, oil and egg. Fold in half the raspberries. Pour into prepared pan. Level top. Sprinkle over remaining raspberries, pushing gently into batter. Bake for 30 minutes or until a skewer inserted into the centre comes out clean. Stand in pan for 10 minutes, transfer to a wire rack to cool. Drizzle with chocolate. Serve. 18.01.2022 Check Out Anne’s Favourite Sugar-Free Brownies INGREDIENTS 425g can black beans, drained, rinsed 12 fresh dates, pitted ... 1/4 cup coconut oil 1/4 cup milk 1 teaspoon vanilla bean paste 1/2 cup raw cacao 1 tablespoon walnuts, halved 1 tablespoon pistachios 1 tablespoon hazelnuts, halved METHOD 1. Preheat oven to 180C or 160C fan forced. Grease and line base and sides of a baking tin (16cm X 26cm) with baking paper. 2. Process beans until smooth, scraping down sides of bowl several times (this will take 1-2 minutes). Add dates, oil, milk and vanilla and process until smooth. Add cacao and process until combined. Spoon into prepared tin and level surface with a spatula. 3. Arrange nuts on top in 16 clusters (imagine how you will cut brownie once cooked). Bake for 20 minutes or until top forms a crust. 09.01.2022 Check Out Taylah’s Favourite Refined Sugar-Free Chocolate Chip Cookies INGREDIENTS 125g unsalted butter, melted 60ml (1/4 cup) light agave nectar... 1 egg 1 teaspoon vanilla extract 225g (1 1/2 cups) plain flour 1 teaspoon cornflour 1/2 teaspoon baking powder 1/4 teaspoon ground cinnamon 75g sugar-free chocolate, coarsely chopped METHOD 1. Combine the butter, agave nectar, egg and vanilla extract in a large bowl. 2. Sift in the flour, cornflour, baking powder and cinnamon. Stir until a soft dough forms. Stir in the chocolate. Cover with cling wrap and refrigerate for 30 minutes. 3. Preheat oven to 180C or 160C fan forced. Line two baking trays with baking paper. Roll teaspoonfuls of cookie dough and place on the prepared trays. Flatten each with a fork. Bake for 10-12 minutes or until golden on the edges. Transfer to a wire rack to cool completely. 03.01.2022 Check Out Kate’s Favourite Sugar-Free Banana Bread INGREDIENTS 4 very ripe bananas 2 eggs... 1/2 cup olive oil 1/4 cup milk 1 teaspoon vanilla bean paste 1 teaspoon Ground Cinnamon 1 cup wholemeal flour 1 cup plain flour 1 teaspoon baking powder 1 teaspoon bicarbonate of soda Pinch salt METHOD 1. Preheat the oven to 160C or 140C fan-force. Grease and line a loaf pan with baking paper. 2. Mash bananas in a large bowl with a fork until smooth. Add eggs, oil, milk and vanilla and stir until combined. Sift flours, cinnamon, baking powder, bicarbonate and salt over banana mixture (tip in the flour kernels). Stir until combined. Spoon into prepared pan and level top with a spatula. 3. Bake for 1 hour 10 minutes or until a skewer inserted in centre comes out clean. Stand in pan for 5 minutes. Transfer to a wire rack to cool.
