18.01.2022 While sugar is a feature of carbohydrates, cutting out carbs to lose weight is not as simple as it sounds. There is a significant difference between the sugars featured in wholefoods and the refined sugars present in many of the confectionery and baked goods we have today. For one, wholemeal carbs (also known as 'complex'), are digested slower than refined sugar. The refined sugars are what is implicated in weight gain and metabolic diseases, whereas actually, many of the naturally occurring sugars in whole, complex carbs contain prebiotic properties that nourish beneficial bacteria in the gut! This means there's no need to cut carbs from your diet. Alongside healthy fats and protein, they make up the three essential macronutrients that the body needs to function. To make your own, you'll probably need a food processor or blender, such as for this Zuccanoush recipe! It's a fresh take on Babaganoush that replaces eggplant with zucchini, if that's more to your liking. To make it, you will need: 3x small zucchini, quartered lengthwise 3 tbsp. olive oil, divided... Kosher salt and pepper 1 clove garlic 1/4 c. tahini 2 tbsp. fresh lemon juice 3 tbsp. mint leaves, divided 1 tbsp. pine nuts, toasted Method: 1. Heat grill to medium. Toss zucchini with 1 tablespoon oil and 1/2 teaspoon salt and grill until tender and evenly charred, 8 to 10 minutes. 2. Transfer zucchini to blender along with garlic, tahini, lemon juice, and 1 tablespoon mint and pulse to combine. With motor running on low speed, drizzle in remaining 2 tablespoons olive oil and puree until mostly smooth, increasing blender speed if necessary. 3. Chop remaining mint. 09.01.2022 Is there a more trustworthy snack than banana muffins? We love this healthy update to a household staple, as it reduces the waste of mushy bananas doubles as a satisfying treat! To make, you will need: 2 eggs 2 tbsp 100% pure maple syrup... 1 tsp vanilla extract 3 medium-sized ripe bananas, well mashed 125ml milk of your choice 75g rolled oats 260g wholemeal flour 1 tsp baking soda tsp ground cinnamon 1 small handful of chopped walnuts (optional) Method: Preheat oven to 180C and line a 12-cup muffin tray with paper cases. In a large bowl, whisk the eggs, maple syrup and vanilla extract together until well-combined. Stir in the mashed bananas and milk. In a separate bowl, combine the rolled oats, wholemeal flour, baking soda, cinnamon and walnuts, if using. Add the banana mixture to the dry ingredients and mix with a wooden spoon, until just combined. Divide the batter evenly between the 12 cases. Bake the muffins for 15-20 minutes, or until a skewer inserted into the middle of the muffin comes out clean. Leave the muffins to cool for 5 minutes in the muffin pan. Turn out carefully onto a wire rack to cool completely. If you like, top them with a slice of fresh banana. Enjoy! Recipe via @kayla_itsines
