21.01.2022 New release! 2019 Dromana Estate Chardonnay. Our Chardonnay fruit was handpicked and gently whole bunch pressed direct to French oak puncheons, 40% of which, was new oak. Specifically selected yeasts were used to enhance the fruits characteristics and the wine was left on its lees in... barrel for 12 months. Around 50% of the wine was allowed to go through malolactic fermentation to add complexity and palate weight to the end product. The superb fruit purity and refreshing acid balanced beautifully with subtle oak makes this the perfect partner to seafood and poultry dishes. 12.9% ALC. Vegan friendly. 19.01.2022 Case special! Dromana Estate Blanc de Blanc’10 case of 6 for $250 (normal price $330). Our Blanc de Blanc was awarded Gold at the USA Sommeliers Choice Awards. To celebrate our multiple wins, we have a few specials coming up. This week, for one week only, it’s the bubbles..so raise a glass!... Blanc de Blanc, meaning white from white in French is a sparkling variety made purely from white grapes. In this instance we have made ours from 100% Chardonnay grapes sourced from the Macedon ranges, this was the last of the fruit that we sourced from outside our vineyard. This Blanc de Blanc was made in the traditional méthode champenoise, which requires a secondary fermentation in the bottle. This secondary fermentation is accomplished by adding a mixture of sugar and yeast to still wine. This wine is then bottled and capped, with a bottle cap similar to ones found on beer bottles not a cork. The yeast acts on the sugar and the resulting carbon dioxide remains trapped in the bottle. Quality sparkling wines are usually left on their lees for several months, even years. This Blanc de Blanc has been left for 8 years before it was disgorged; meaning the cap was removed and replaced with the traditional cork with wire cage. The delicate combination of yeast and toast to the nose, zesty & citrus flavours make this wine the perfect duo for fish & Shellfish, particularly oysters as well as Parmesan based dishes. 13% ALC. This allows fruit to ripen slowly, enabling a build up of flavour complexity. Peter have produced a Pinot that exhibits a great degree of elegance. Its juicy and beautifully rounded on the palate ...with flowing mouthfeel and seductive savoury nuances, making it engaging and enticing. From 100% handpicked, estate grown fruit from selected rows in the close planted section of the vineyard, which was then fermented in open vats for three weeks prior to being pressed into old French oak puncheons and left to its own devices for 12 months. 01.01.2022 Winter 2020.the Winter of our discontent. Vineyard and winery update from our wine make Peter Bauer. What a year it’s been; fires, smoke taint, poor fruit set and crop loads followed by the biggest whammy of them all, Covid 19. To say it’s been a challenge for everyone in our industry is the understatement to end them all. As we prepare to come out of Stage 4 lockdown, a little wiser (I have my fingers crossed), we all hope that our cellar-doors, restaurants and wine bars ca...n open again and people can enjoy wine in the company of others as its intended. But lockdown or not the vines don’t stop growing and needing TLC and the maturing 2020 wines still require regular cuddles. So what’s going on? Vineyard Click go the secateurs boys, click,click,click.I’ve been working on my pruning skills and have given particular love and attention to some selected blocks of Chardonnay and Pinot Noir. We plan to create a Reserve Pinot and Chardonnay in 2021 (weather gods permitting) so these blocks will be getting my close attention right through the growing season to ensure super duper quality fruit. Because as we all know, ‘you can’t make a silk purse out of a sow’s ear’. Winery The 2020 wines in barrel are getting topped every 2 weeks and at this early stage of their lives the Chardonnays are bright and fruit driven with exceptional acid and length. The 2020 Pinots are a completely different beast compared to the 2019 wines. Much lighter in colour but they are showing real elegance with fine strawberry characters and a nicely balanced palate. These wines will stay in barrel until early 2021 and look to be in your favourite wine shop by mid 2021. Stay safe and there will be a further update in Spring when the vineyard explodes into life again.
