25.01.2022 One word...calzone... As far as I'm concerned it's just a whole level up from regular pizza. You get whatever topping you want, all hot and melty, just like you picked up your slice of pizza and folded it it half so you can eat it without the toppings falling in your lap. I'm not saying they still won't. As usual, it was a " What bits and pieces have I got to use up" affair.... Left over roast chicken, pesto, mushrooms, spinach, cherry tomatoes, ricotta & boccincini for the ooze factor. I like to heat a cast iron pan in the oven at full whack for a good half hour. I carefully pull it out, give it a generous sprinkle of cornmeal & then slide in the filled calzone. 20.01.2022 Phew...we're pooped!! Just lugged this lot down from the store room upstairs. That's our cardio done for the day... Can't wait to put it outside tomorrow though We are pretty much back to normal, just with a bit more space between tables. So much love and thanks goes out to everyone who has booked us out almost everyday over the last 2 weeks, it's been amazing. Ten seats has been a challenge that's for sure, but with your support and understanding we made it work. From now... on we will be open 7am til 2pm daily...closed on Wednesday. 17.01.2022 I think pastry is generally in people's no go zones in terms of cooking. "Why would I make it when I can just buy it??". Now I'm not saying I never buy pastry but a home made rough puff pastry is actually really quick and easy and delicious as well. Last night definatly felt like a pie night. A pot pie to be exact, filled with chicken, speck, broccolini and mushroom. The pastry was the crowning glory. 200g plain flour Pinch of good salt... 100gm unsalted butter Around 80ml iced water Cut the butter into little cubes and combine in a bowl with the flour and salt. Toss the butter through the flour, rubbing it in roughly so it starts to look a bit shaggy. You still definatly want to see little chunks of butter though. Gradually add the water, you may need a little more or less, gently bringing the mixture together with your hands until it forms a rough shaggy mass. Turn it out onto a lightly floured surface and pat it out to a rectangular shape. Roll out and then fold the top down and the bottom up, a bit like you would fold a business letter. Give it a quarter turn, turn it over so that the folds are underneath and roll out again. Repeat the process 5 times then wrap in cling wrap and let it chill in the fridge for a bout 30 minutes before you use it. 13.01.2022 Lasts nights dinner is a massive favourite of mine. It's a spinach and cheese pie that uses a whole packet of filo pastry and gets cooked in a frying pan. The original recipe is in @jamieoliver 30 Minute Meals I think, but mine varies according to what cheese I have in the fridge. I didn't have any pine nuts yesterday so I subbed in some toasted flaked almonds. I also like a bit of sesame action on the top. 13.01.2022 Easy dinner tonight. Slow roasted chicken with lonely veg... When I say lonely what I mean is, I used up lots of bits and pieces that weren't really enough to serve on their own . A rough mash of potato and carrot seasoned with just butter, salt and lots of black pepper, and a French style braise of peas & cos lettuce with some bonus pancetta, garlic and broccolini. ... 09.01.2022 A sorta, kinda, Mexican pizza/flatbread for lunch today. Started off with a lamachun recipe from @nigella How to be a Domestic Goddess, which I botched by adding too much water to it. Added more flour till it was manageable, didn't knead it tho, just banged it in an oiled bowl and let it rise for an hour. Then I just divided it into 2, pressed each portion out into a large fry pan and spread some leftover chilli con carne. Cooked it over a high heat until the bottom was brow...n before whacking it under a hot grill to cook the top. Added spoons of @tolpuddle goat curd, chunks of avocado, finely chopped habonero chilli, lemon zest and some rocket dressed with loads of lemon & olive oil. 06.01.2022 Risotto is always on the menu at home. I know that a lot of people are scared to make it, they think that it's a long, difficult process and worry that they won't get it right. Things actually couldn't be further from the truth. You get to hang out and relax after work with a glass of wine in one hand while you stir a pot of rice with the other, music on, and just let the stresses of the day go. Perfect stoveside pottering. Just finely chop onion and celery and saute in som...e olive oil over a medium heat until soft. Add your aborio rice and cook, stirring for a minute or two until it gets warm and starts to lose that glassy look. Pour in some white wine...just use some from that bottle you're drinking...and let it bubble away while you stir, then add hot stock, ladle by ladle, stirring all the while. Let each addition of stock be absorbed by the rice before you add the next one. Tonight I added some left over chicken, some shredded silverbeet and some roasted cherry tomatoes, but risotto is such a great vehicle for flavours that you can add whatever you like and make it your own. When the rice is cooked but still with a little firmness to it, turn the heat off, add parmesan, give it a good stir, bang a lid on it and leave it to rest for a couple of minutes. Warm your bowls, top up your wine glass and then remove the lid. Give it a gentle stir, adding a little more stock if you need to, it should be lovely and oozy. 05.01.2022 The perfect bowl of autumnal comfort food. A couple of chicken thighs diced and browned with thyme, leeks, butternut pumpkin, sliced shitaki mushrooms, a handful of barley, stock. Simmered for about 40 minutes or until the barley was tender & then some shredded silverbeet from the garden stirred through til it wilted.
