23.01.2022 Mandarins are a great source of vitamin C and vitamin A which are good for the immune system. They also contain potassium that helps regulate blood pressure and magnesium for a strong cardiovascular system. Look for mandarins that are firm, but its skin should have a loose feeling and give off a fresh citrus fragrance. Mandarins should be stored in a cool place for 1-2 weeks. Refrigerate mandarins that are not used within that time.

22.01.2022 This meat-free Monday you can warm the cockles of your heart with a tasty bowl of immune-boosting broccoli soup. This soup will even convert those who don't like leafy greens. Serves up to 8 INGREDIENTS... You'll need: 1 brown onion 1 carrot Olive oil 2 cups chopped potatoes Lots of broccoli florets Vegetable stock Salt, pepper, cumin Grated parmesan or cheddar (optional) METHOD Sauté 1 chopped onion and 1 large carrot in butter and a bit of olive oil. Add 2 cups of chopped potatoes. Add broccoli floretsnas much as you like. Add vegetable stock Top up with water so all ingredients are submerged. Add salt, pepper and a touch of cumin. Simmer for 20 minutes. Blend with a kitchen whizz stick. Serve with grated parmesan or cheddar on top. See more

Locally grown, super crisp, tender and naturally sweet, snow peas add crunch to salads and are a popular addition to stir-fry’s, stews and casseroles. Choose crisp snow peas with bright green pods and store them in an airtight bag in the crisper section of the fridge. For a quick and easy stir-fry toss prawns snow peas, ginger in a wok with chicken stock, soy sauce and olive oil. Sprinkle over salt and pepper to taste and garnish with fried spring onions. Yum!
22.01.2022 Buddha bowls are so versatile and they are simple to make. The bottom of the bowl is usually a grain, you can use brown rice but we love quinoa, but a combination of both work well. The next layer is your protein. This is what will keep you feeling fuller for longer. You can use things like edamame, chickpeas, lentils, or tofu. (If you're a carnivore, teriyaki or sweet chilli chicken complement this nicely).... Next come the vegetables. Diced and roasted pumpkin and sweet potatoes make a great addition (make this in advance). Thinly sliced capsicum in all colours, radish, carrot strips, cucumber, spring onions, avocado, cherry tomatoes, spinach leaves. You can eat them naked or dress with teriyaki, honey mustard or kewpie mayo. See more

In a bowl combine 2 tablespoons of red wine vinegar, a quarter of a cup of finely chopped coriander leaves, three-quarters cup of finely chopped flat-leaf parsley leaves, 2 cloves of garlic (add more if you love garlic) three-quarters of a cup of virgin olive oil ad half a teaspoon of fresh red chilli. Season. Use to baste meats (chicken or steaks) while grilling or barbecuing.

Choose fruit which is sweet-smelling, unbruised and free from other signs of deterioration such as black spots. However, at times during the year, the papaya may have markings resembling freckles on the skin. These marks are nicknamed Winter Freckle, and fortunately do not affect the flesh at all. Eat fresh as a breakfast fruit combined with passionfruit or with other fruits in the form of a fruit salad. As the main course, papaya often accompanies veal, chicken or seafood. Puree and in cakes, scones and fruit flans. Preserve in delicious relishes and chutneys.

They are a little more bitter than the red capsicum which has a slighter higher sugar content, more antioxidants and higher vitamin C and E. However, they can be cooked in stir-fries or stews or raw in salads. Capsicum halves can also be cooked and stuffed with your favourite ingredients such as cauliflower rice or cous cous. These Buffalo Cauliflower nibbles will be a hit with the whole family. cup flour 1 teaspoon paprika 2 teaspoons garlic powder... 1 teaspoon salt teaspoon pepper soy or almond milk 1 head cauliflower cup buffalo sauce or hot sauce 2 tablespoons coconut oil or vegetable oil 1 tablespoon honey Celery Ranch Dressing Preheat the oven to 230C Line a baking sheet with baking paper. In a large bowl, add the flour, paprika, garlic powder, salt, pepper, and milk, and stir until well-combined. Break the head of cauliflower into florets, about 4cm wide. Add the cauliflower florets to the batter, making sure each piece is evenly coated. Arrange the coated cauliflower on the baking sheet. Bake for 20 minutes, turn over after 10 minutes. Meanwhile, in a small bowl, combine the buffalo sauce, coconut oil, and honey and stir until evenly combined. Brush the buffalo sauce mixture on the cauliflower and bake for another 20 minutes.
