25.01.2022 Today is National Lamington Day! Yes there is a day we don’t need an excuse to indulge in the iconic Australian lamington. This is one of my favourite recipes. These Lamingtons are the perfect healthy protein rich treat. Best of all they require no baking and are so quick and easy to prepare. They are also wheat, gluten, dairy and sugar free and I can’t wait to share this recipe with you below. RAW VEGAN LAMINGTON DONUTS... Serves 8 1 1/2 Cups raw cashews 1/2 cup macadamia 3/4 Cup Coconut Flour 3 Tbsps Protein Natural 1 cup Dessicated coconut 1/2 Cup Brown rice syrup 1/4 cup Coconut milk 1/4 Cup Coconut Oil 1 tsp Vanilla Method: Place cashews, macadamia nuts and dessicatwd coconut on a food processor and process till fine. Add the coconut flour, protein and vanilla and process till combined. Add the remaining ingredients and process till mixture comes together. Place into a donut mould leaving the base intact so that we can put jam in the indented hole. Refrigerate till set CHOCOLATE DIPPING SAUCE 1/3 Cup coconut oil 1/4 Cup Coconut Nectar 1/4 Cup Cacao Powder 1Tbsp Cacao Butter Place all ingredients in a blender and blend till smooth. Place in a bowl and set aside. RASPBERRY CHIA JAM 1 Cup Raspberries 2 Tbsps Coconut Nectar 1/2 tsp Lemon Juice 2 Tbsps Chia seeds Place all ingredients in a blender and blend till smooth. Mix through the Chia seeds. Place in a bowl and set aside. Assembly De -mould Donuts Place an extra 1 1/2 cups dessicated coconut in a bowl for coating. Dip Donuts in chocolate sauce and then coat with dessicated coconut. Fill the centres with jam and place in the refrigerator to set. Enjoy. 25.01.2022 Purple Cauliflower Winter veggie vibes. Brightly coloured fruit and veggies contain antioxidants. The purple in particular contains an antioxidant called anthocyanin which is incredible for immunity, longevity and cardiovascular health. I count colours not calories in my meals. I had the beetroot hummus in my fridge and chopped some beautiful purple wombok tossed it in some Ume Boshi vinegar gave it a bit of a massage. The purple cabbage turned into the prettiest pink hue.
