They only produce tiny volumes of all their wines, and their philosophy is all about minimally interfered with single vineyard wines that truly express the different sub-regions of the Adelaide Hills.... 50% Pinot Noir / 50% Chardonnay. Pinot Noir hand-picked, whole-bunch pressed and wild fermented. Chardonnay hand-picked, gently destemmed retaining whole berries, then wild fermented dry on skins. Wild fermented, unfined, unfiltered in 100% old French oak So aromatic, with lots of guava, apricot, quince paste and a bit of fennel seed spice. Growing up in Meursault at the home of Domaine Rougeot, Pierre-Henri learnt first hand the work and life of a vigneron. Pierre-Henri prefers to press both his white and red grapes using a modern version of an ancient vertical grape press. Although made with the latest technology, this unconventional press differs from the pneumatic, horizontal press preferred by most producer...s and produces higher acid extraction and greater clarity of must. The result is dynamic, complex and elegant wines. Both reds and whites are matured in supremely balanced, artisan oak barrels where indigenous yeasts within the oak are allowed to work their magic. The superior barrels give a grace and richness to the wines without overbearing oaky notes. @closcachet

His LUBIGO bottling is 100% Ortrugo, one of Emilia Romagna’s native gems. It sees 10 days of skin contact & ferments in concrete tanks over winter. In the Spring the wine is bottled under a waning moon & re-fermentation begins naturally leaving delicious gentle bubbles. As per tradition, it’s not disgorged allowing the wine to evolve on the yeasts. 17.01.2022 2018 Occhipinti Siccagno Nero d’Avola Arianna Occhipinti is arguably one of the the most sought after producers in the Italian natural wine game. The niece of Sicilian winemaking royalty in Giusto Occhipinti, her wines have an earthy, almost raw quality and are more about finesse than power. This well farmed Nero d’Avola spends around 25 days on skins prior to maturation in Slavonian oak barrels for 16-22 months.... Deep, complex, blue and black fruited with a touch of salinity and racy acidity. A lovely signature of soil, modest tannins and slightly herbal.

Join us on Sunday 18th April as Aine Conran from Heart & Soil presents all things German Riesling in what will be a relaxed yet informative afternoon. We will explore the origin, diversity and it's ability to cover the entire spectrum of sweetness from bone dry to decadently sweet. You will explore ten different wines across four flights from four different regions of planet Riesling. We will be firing up the spit, roast...ing some pork with rolls, roasties and sauerkraut to accompany. The first flight will look at four of the most renowned Riesling producing regions in Germany; Rheinhessen, Rheingau, Mosel and Pfalz. We will explore Being arguably the most expressive grape of it's terroir, the second flight will focus on three wines making single site expressions and the nuances each site can produce. Flight three will focus on two Grosses Gewächs or 'GG's' - the Grand Cru's of Germany. Like the grand crus of Burgundy, these wines take the name of the vineyard and not the village. The fourth and final flight will focus on an exceptional late harvest wine from one of the most prestigious producers in Germany. Under the tutelage of Tom Lubbe at Matassa, his first vintage was 2016. An aromatic, skinsy Muller Thurgau/Riesling field blend, its full of orange peel, pineapple, ginger and white flowers. With only a few vineyards, the two brothers also buy freshly harvested grapes from certified organic winemakers in the region. 100% Pinot Noir from their family vineyards in Savigny-Lès-Beaune. Vines are 35 years old, gr...own on chalk and clay. Fermentations and élevage in old barrels, bottled April 2018. Zero SO2. Give this some air, as the perfume really opens up. Pretty perfume, with red berries, red fruits, and underneath it all - a mix of oriental spices and mystical florals. The aromas aren’t exaggerated, you have to sniff deep as they’re subtle, but it’s worth it as they are quite unique. On the palate, it’s supple and ever-so slightly sappy. Fresh and elegant, with bright red fruits, and a hint of savoury on the finish. Feels like it has something to give with more time in bottle, but it’s delicious now, if a bit slightly wrapped up. It has bright acidity, quite good tension, and a fine frame. Very tasty indeed! @r_larkin

07.01.2022 Cobaw Ridge was established in 1985 by Alan and Nelly Cooper in the Macedon Ranges. Vines were planted on granitic, sandy soil in the cool climate Macedon Ranges, on the cusp of the Great Dividing Range at some 610m. Their positioning, in a natural amphitheatre, provides the perfect place to produce terroir-driven wines. This estate is the only certified organic and biodynamic producer in the region, something they are very proud of, and deservedly so.... Alan firmly believes that great wines are made in the vineyard and the vines come first at Cobaw Ridge. They grow excellent examples of Syrah, Chardonnay and Pinot Noir as well as Australia's most sought-after example of Lagrein. Only ever employing people to help with picking, they ensure total control is carried out with a gentle hand from grape to glass. 05.01.2022 2018 Enderle & Moll Muller Thurgau - Baden It has been said in some circles that Sven Enderle and Florian Moll produce some of the best, most impressive and unique wines in all of Germany. They certainly break the mould compared to every conventional estate in the West of Germany. They farm all the vineyards organically and biodynamically. Absolutely everything is done by hand in the vineyards (which are quite steep) and in the cellar.... Their Muller Thurgau is such an aromatic wine! 25% of the wine is macerated on skins to add volume and lick of tannin.
