13.01.2022 An easy self quarantine meal Tamago Kake Gohan it literally means Egg on rice, this is a popular Japanese breakfast dish and most sushi chef have this as a quick snack before service. It takes less than 5 minutes to prepare. Ingredients: 1 cup of hot rice 1 egg (1 optional egg yolk)... 1 tbsp of Soy sauce 1/4 tsp of chicken stock Japanese seasonings (Furikake & Togarashi) Instructions: Crack an egg directly into the rice, add soy sauce & chicken stock. Stir vigorously with chopsticks/fork to incorporate the egg until the rice is fluffy and frothy. Add seasonings and enjoy (make small indentation in the middle and add egg yolk for extra creamy texture - if using). 04.01.2022 Lunch sorted..Japan X Indonesian style Steak Donburi with Fried Rice Indonesian style Fried Rice; 4 - 5 small shallots (finely sliced) 4- 5 garlic (finely sliced)... 5- 7 birds eye chillies (finely sliced) 1 tsp shrimp paste Salt & pepper 1 tsp chicken powder stock 1 tsp sugar 1 tbsp Kecap manis (sweet soy sauce) 2 - 3 eggs Cold rice (preferably cooked the day before) Donburi; 2 x Good quality Scotch fillet (250gr each) Salt & pepper Knob of butter 2 - 3 garlic 2 x egg yolks (to garnish) Chopped scallions (to garnish) Teriyaki sauce; 1 onion finely sliced 5 tbsp Soy sauce 2 tbsp Mirin 2 tbsp Cooking sake 2 - 3 tbsp sugar 1 tbsp lemon juice (or store bought Yuzu juice) Fried Rice Heat oil into wok on high heat and put all the sliced ingredients and sautéed for 2 - 3 minutes add salt and pepper, sugar and stock powder. Cook for a minute and quickly add eggs and rice. Add Kecap manis and season to taste. Steak; Heat oil in a pan on high. Cook the steak each sides for three minutes (for medium rare) add knob of butter and garlic. Tilt the pan slightly and baste the steak with garlic infused butter. Cover the steak and leave it to rest for 3 - 4 minutes. Teriyaki; Using the same pan (with left over juice from the steak) sautéed the sliced onions, until it caramelises. Add the rests of ingredients. Cook until the sauce thickens and add the lemon juice at the end. To serve; Finely sliced the steak and put the fried rice into a medium size bowl. Add the caramelised onions and arrange sliced steak on top. Create small indentation in the middle and add raw egg yolk (optional). To garnish add sliced scallions and drizzle the teriyaki sauce.
