15.01.2022 As the weather has taken a turn back to winter, we reckon a nourishing bowl of soup is on the cards. As it's Meat Free Week, then it's a no-brainer for us and we'll be pulling our baby red lentils out of the pantry to whip up a bowl of potato & leek soup. Recipe from Simon Bryant below. Reminder that our buy-one-get-one-free offer on 750g essentials baby red lentils ends on 27 September - head to our website for details: https://www.dirtyinc.com.au/ serves 4 Ingredients... 1 kg slightly waxy spud (i.e. Nicola), diced small 250 g baby red lentils * 1 bay leaf 4 cloves garlic, crushed 1 onion, diced 1 bunch of leeks, whites sliced roughly salt flakes 2 tablespoons dried oregano 150 g butter To serve 300 ml cream 1 bunch parsley, leaves roughly chopped squeeze of lemon juice and zest 80 ml extra virgin olive oil * Substitute with our royal baby blue lentils Cover lentils with 4 times their volume of cold water, bring to the boil and simmer for around 25 - 30 mins or until al dente. Drain but keep the cooking liquid and set both aside. Sweat the leeks and onion in butter and salt with crushed garlic until soft. Add diced spuds and cooking water from lentils and top up with about a litre of cold water. Simmer until spuds are soft. Blitz with stab mixer until smooth. Fold in cream and cooked lentils (with cooking liquid - it's tasty!), season with a little more salt if required and some black pepper and a squeeze of lemon juice. Ladle into some bowls, garnish with a drizzle of olive oil, parsley and lemon zest. Serve with some warm crusty bread.
