25.01.2022 Coconut & Polenta Breakfast Bowl INGREDIENTS 2 cups of boiling water 1 cup lite coconut milk... Toppings of choice for bowl METHOD 1. In a saucepan on lowest heat add boiling water and polenta stirring constantly. 2. As its starts to thicken add coconut milk 3. Keep stirring on very low heat until the mixture no longer feels grainy add more coconut milk if needed. 4. Take of heat once polenta is at desired texture and add 2 tablespoons of coconut milk or water to stop it from becoming to thick as it starts to cool down. 5. Get creative and top with your favourite toppings. Granola, fresh or frozen berries, fruit, nuts, seeds, yogurt what ever you like Mine is topped with granola, coconut flakes, frozen raspberries, chia seeds, a drizzle of pure maple syrup and a splash more of coconut milk just Devine. Melt chocolate of choice you can use dairy free sugar free or regular chocolate. Mix in any flavours you like and toppings if you choose. I used a disposable sot cup with a paddle pop stick in the centre. Place in fridge to set. The chocolate will come out from the moulds easily when set. Wrap in a cellophane bag with a a label. One side says the flavour of chocolate the other side says place in a mug of of hot milk. Im gifting with a coffee mug

16.01.2022 My first attempt at keto pancakes. I love the taste of them and they are nice and soft like a pancake should be. Ingredients 1 large egg 2 heaped Tbsp of Macro gentle fibre 2 heaped Tbsp of almond meal... 1 heaped Tbsp of coconut flour 1 Tsp of sweetener of choice (optional) 1/4 cup unsweetened coconut milk (approximately) Instructions 1. Mix all dry ingredients together 2. Add in beaten egg and enough milk to make pancake batter. 3. Place two large table spoons of batter in a warm nonstick or greased frypan and cook on both sides until golden and firm to the touch. 2 net carbs per pancake See more

15.01.2022 Peanut Butter Sesame Protien Balls Ingredients 1/2 cup natural peanut butter 1/4 cup maple or date syrup 1 teaspoon vanilla extract... 1/3 cup protein powder of choice 1/3 cup flaxseed meal 1/2 cup rolled oats 1/2 teaspoon cinnamon 1 tablespoon chia seeds 1/4 cup desiccated coconut 1/4 cup sesame seeds for rolling balls Instructions 1. In a food processor, add peanut butter, syrup, vanilla, protein powder, flaxseed meal, oats, cinnamon and chia seeds. Pulse together until well combined. 2. Add in coconut and pulse a few more times. 3. Roll the mixture into small balls then roll in sesame seeds to coat the out side. 4. Store in the fridge for up to 2weeks, or the freezer for up to 3 months. NOTE: you could add in chocolate chips when you add the coconut if you would like a chocolate crunch.

13.01.2022 Gourmet Crackers Ingredients * 1 cup milk * 1 tbsp brown sugar * cup Greek yoghurt * cup flour... * cup whole wheat flour * cup dried fruit of choice ( apricots, dates, cranberries) * 1 tsp baking soda * cup rolled oats * cup seeds (of choice (sunflower , chia, sesame) * Spices: * tsp cinnamon * tsp nutmeg * tsp dried thyme * tsp salt * 1/8 tsp black pepper 1. Pre heat oven to 180. Whisk the milk, sugar and yogurt in a bowl. 2. In a separate bowl, add plain flour, wholemeal flour and dried fruit. Stir. Add remaining ingredients, you will get a thick batter. 3. Pour into loaf pans and bake for 20 minutes at 180. Cool on rack, then wrap in foil and freeze. 4. Unwrap loaf and allow to thaw partially so the outside is not rock hard frozen (around 20 minutes). This will help you to cut in thin slices. 5. Use a bread knife to slice thinly around 1.5 mm. Place crackers single layer on trays. Bake for 50 minutes at 120, or until a light golden brown. 6. Leave cooked crackers on tray to cool they will harden so they snap when you break them. 7. Store in an airtight container for 4 weeks. You can keep the loaves frozen for up to 3 months then slice and bake into crackers as required, no need to make them all at once.

10.01.2022 Keto Cauliflower Fish Cakes * 1/2 a small head of cauliflower (steamed and mashed) * 1 small onion finely chopped * 1/2 cup almond flour * 2 small cans of drained salmon ... * 1 tablespoon curry powder * 1 teaspoon crushed garlic * Chopped fresh parsley * Salt and pepper * 1 lightly beaten egg Mix all ingredients together cook in heated pie maker for 8 minutes. Carefully turn fish cakes they are quite soft, cook for another 8 minutes. If you dont have a pie maker shape into 8 patties and lightly spray with oil. In a preheated oven cook at 180 for about 20 minutes turning half way through. Makes 8 fish cakes. You can use any cooked fish you like. The almond flour can be swapped for Parmesan cheese. You could use whatever herbs and spices you prefer. The fish cakes are very soft while cooking so be very gentle handling then. I turned them using a silicone spatula. They firmed up as they cooled down. See more

06.01.2022 Pie Maker Keto bread Rolls Ingredients 110g of Almond Meal 5 Tablespoons Macro gentle fibre (Woolworths) 1 teaspoon baking powder... 1 teaspoon salt 2 teaspoons vinegar 3 large egg whites 1 cup of boiling water Instructions 1. Mix all dry ingredients together. 2. Add boiling water, stir until half combined. 3. Add egg whites and vinegar. Stir until combined ( be careful not to over mix) 4. Divide into 6 portions. Cook in pie maker lid closed for around 14 minutes each side or until the sound hollow when you tap them.

02.01.2022 Carrot Cake Energy Balls Ingredients 12 dried Medjool dates cup walnuts 1/2 cup finely grated carrot... 1 cup rolled oats 1 teaspoon ground ginger 1 teaspoon cinnamon 1/2 teaspoons nutmeg 1 tablespoon chia seeds 1 teaspoon vanilla extract 1 teaspoon cup shredded coconut for rolling balls in. Instructions 1. Remove the pits from dates and place in food processor. 2. Add the other ingredients to the food processor and blend until mixture turns into a dough-like consistency. Add a few tablespoon of water if the mixture is too dry. 3. Scoop heaped teaspoon of the mixture and roll into balls. Roll the balls in the shredded coconut. 4. 01.01.2022 Breakfast Time Nut butter & Chia Overnight Oats Ingredients 1/2 cup milk(any type you like) 3/4 Tbsp chia seeds... 1 Tbsp maple syrup 1/2 cup rolled oats (not quick oats) 2 Tbsp nut butter (peanut, almond or cashew what ever you prefer) Instructions 1. In a mason jar or small bowl with a lid, add milk, chia seeds, nut butter, and maple syrup. Stir to combine. The nut butter doesn't need to be completely mixed with the milk. It can be swirled in if you prefer. 2. Add oats and stir a few more times. Ensure all oats have been moistened and are covered with milk. 3. Cover with a lid and refrigerator overnight (or for at least 6 hours). 4. When the oats are ready, serve with desired toppings. OPTIONAL: You can also heat your oats in the microwave for 45-60 seconds. My oats are layered with natural yogurt and raspberries
