18.01.2022 Keep Kids Kool with yummy Watermelon Pops - fresh or frozen 1.Cut the slice of watermelon into 8 triangle portion. Use a knife to make a slit in the skin of each portion and push the wooden stick into the slit. 2.Freeze on a plate or tray for 1 hour. 3.You can then transfer the pops into freezer bags to store.

You can use any mix of vegetables - cheap and in season are best! Basic Chicken and Vegetable Stir Fry What you need: 2 tablespoons oil 3 chicken breast fillets trimmed and sliced ... 1 onion (diced) 1 sliced broccoli, 1 cup sliced mushrooms, 1 cup green beans, 1 cup baby spinach, 1 capsicum sliced, 1 tsp diced ginger (optional) 2 tablespoons of salt reduced soy sauce 1 tablespoon water 1 cup boiled rice What you do: Cook sliced chicken and cook for around 2 minutes in a hot pan. Once the chicken is cooked, put aside and heat the onion and capsicum, stirring for 2 minutes. Add the remaining vegetables as well as the ginger Return the chicken to the wok with the soy sauce and water, stirring well until the vegetables and the chicken are coated and crisp. Serves: 4 Ingredients: ... - 4 x 15cm Lebanese Wholemeal Bread - 1/3 cup reduced tomato paste - 100g roast chicken or 97% fat free ham - 2 ripe tomatos finely chopped - 8 button mushrooms, sliced - 1 red capsicum finely chopped - 1 cup grated cheddar - Salad Leaves to serve Method: 1. Preheat oven to 180 degrees. 2. Coat tomato paste on Lebanese bread 3. Cut up all ingredients 4. Allow children to decorate their pizza 5. Place pizza in oven until cheese has melted. 6. Serve with a side of salad Note: If their is a particular vegetable that your child will not eat, replace it with another vegetable.

15.01.2022 Banana ‘Nice’ Cream Such a delicious and healthy alternative for dessert or an afternoon treat. Ingredients: ... 2 large bananas 1 tbs shredded coconut Nuts and cinnamon to top 1. Peel and chop your bananas into small pieces, then place into freezer bag or container and freeze overnight. 2. Place frozen banana pieces in a food processor or very powerful blender (I find the processor works the best). 3. Process until bananas look crumbly, then scrap down the sides and keep processing. Repeat this process until banana starts to look like soft serve ice cream, then add in the coconut. 4. You can eat it straight away or put it in a container and back in the freezer, to have the same consistency as regular ice-cream. Serve with nuts, sliced banana and/or cinnamon on top! You can add whatever you would like to the banana ‘nice’ cream, such as cacao (1 tsp), cacao nibs and goji berries. For a berry 'nice' cream, add half a cup of frozen berries to the mix.

Vary the ‘sticks’ to use different coloured vegies Try adding extra chopped or grated vegies to the guacamole too, e.g. chopped tomatoes, grated carrot, finely chopped cooked green peas, or fresh herbs. Look for crackers, savoury biscuits or breadsticks that have less than 600 kJ per serve, less than 3 g saturated fat per serve and less than 200 mg per serve What you need: (makes 12) 4 ripe avocados... 1 spring onion (eschallots), finely sliced 3-4 tbsp lemon juice (to taste) 3 celery stalks, cut into sticks 1 small green capsicum, cut into sticks 8-12 crackers (depending on their size) What you do: Scoop out avocados and place into a bowl. Fork mash the avocados. Mix in the spring onion and lemon juice. Put 2-3 teaspoons of guacamole into a cup and add vegie sticks, crackers and a spoon. You may find it easier to break crackers in half to fit into the cup.

Ingredients: 310g tin corn kernels, drained ... 150g zucchini grated 2 eggs lightly beaten 1/2 cup milk 1 cup self raising flour 1/2 teaspoon of cumin To Serve: Salt and black cracked pepper Chopped tomato Chopped avocado Chopped coriander leaves (optional) Method: Whisk together the corn, zucchini, eggs and milk. Gradually stir in the sifted flour and cumin, salt and pepper Heat a little oil in a non-stick frying pan over medium heat. Using a tablespoon, place heaped spoonfuls of the mixture into the pan and cook in batches. Using a spatula, turn them once, until golden and cooked through. Drain on a paper towel, cover and keep warm whilst cooking remaining fritters Serve the cakes with chopped tomato, avocado and coriander leaves (if desired). Enjoy! :)

It's a winner :) In a large bowl combine: 3 medium zucchini - grated 1 cup Bega cheese grated... 1 large onion finely diced 1 large carrot grated 6 slices short cut bacon finely diced cup vegetable oil Mix 1 cup of sifted SF Flour with 1 teaspoon of Baking Powder Whisk 6 medium eggs Alternately add eggs and flour to vegetable mixture Pour into lined lamington tin and cook for 50-60 minutes at 180 or 150 fan forced. 03.01.2022 Bolognese Sauce with Zoodles (Zucchini Noodles) - Serves 5 Sauce: 2 onions chopped 2 carrots grated or finely diced ... 2 sticks celery finely diced 500 g lean beef mince 1 cup of water 250mL tomato based pasta sauce 2 3 generous tablespoons tomato paste Sea salt and pepper to taste Parmasen (to serve) Pasta: 4 zucchinis (for pasta) 1. Sauté’ (fry) the onion, carrot and celery in a little olive oil over medium heat until softened. 2. Add the beef mince and cook for 5 10 minutes until browned. 3. Stir through the tomato paste, water and 250mL of tomato based pasta sauce. 5. Cover the pot and cook over a low heat for 1 hour until the sauce is thick and rich 6. Season to taste and set the pot aside until ready to serve. Note: If you do not have a spiral maker, you can grate the zucchini with the large side of your normal grater, then pour the sauce on top. To make the zucchini noodles 1. Using a spiral maker, twist zucchini through until long pasta like strands are formed. 2. Toss zucchini in a pan over a medium heat for 1 2 minutes. Divide zucchini spaghetti onto serving dishes and top with bolognese sauce, chopped parsley (optional) and grated cheese. Serve immediately and enjoy.
