05.01.2022 MY MUM’S LEMONGRASS CHICKEN CURRY RECIPE This is not your expected heavy, creamy strong Middle East curry. Vietnamese lemongrass chicken curry is much thinner and lighter. It tastes much closer to Japanese curry, but with a subtle sweetness from coconut milk that Thai curry has. There really is nothing better than dipping a toasty piece of bread into the rich broth! It also goes very well with rice or even rice noodle (bún). You may not find this dish often in Vietnamese res...taurant but I grew up with it and it is so popular in any special occasions in my home town such as wedding, lunar new year, death anniversary or any party or gathering. Mum is a great cook and she is always in charge of cooking for the whole family and extended family for all of the gathering. I have a big family so it could go up to 30-40 people easily in those occasions. If you wonder what we have for party? Homemade meals of course. Started with spring rolls or rice paper rolls, a salad (lotus roots salad/ chicken cabbage salad) with prawn crackers, then usually a chicken curry/ beef ragout with bread rolls or a seafood dish and finish with a hot pot (most of the time). It's served in our pre-wedding dinner and all our friends and family loved it so much that we had to have it on the menu! Beef is luxury meat in Vietnam as it's quite more expensive than chicken and pork. That’s why you find beef dishes more often on special occasions such as weddings, family parties... ... The beef Ragout is either good to have with rice or bread rolls.
