24.01.2022 Mushroom Cannelloni Ingredients for the sauce: - 1 onion, 1 clove garlic, left over veg all diced, Italian herbs and a bit of chilli if you are game, 1 jar tomato passata... Ingredients for the filling: - 300g mushroom, 1x leek, 5 cubes frozen spinach, salt, pepper Other ingredients: 1 packet cannelloni, sprinkle of cheese for the top layer (or use fresh lasagne sheets and roll once filled) Works best when you cook the sauce and the filling at the same time. See photos. The sauce: - Cook the onion and garlic until fragrant - Add the diced veg and cook low and slow - Add Italian herbs and tomato passata - Continue cooking low and slow until all veg are soft - Once all veggies are cooked, blend the sauce into a puree. If it is too thick, add some water (as this sauce is what is going to cook the cannelloni). Place 2 scoops of this in with the filling The filling: - Cook the onion and garlic until fragrant - Add the leek and continue to cook for another 5 mins - Add mushrooms and cook low and slow - Add the spinach once the mushrooms have softened - Add some Italian herbs and some salt and pepper for flavour - Place those two scoops of the passata sauce into this pan and cook for a few minutes The cannelloni: - Place a layer of blended sauce on the bottom of a baking tray - Fill the cannelloni with the mushroom/spinach/leek. Tip, if you fill a zip locked plastic bag with the filling, and cut the corner of the edge off, you have just created your own piping bag. This makes it way easier to fill the cannelloni. Note - the smaller the cut the better. - Place a layer of sauce over the top so each cannelloni is surrounded with sauce - Top with cheese (parmesan is very nice with this dish) - Bake in an oven at 200 degrees Celsius for 30-35mins - Enjoy! Tip: Keep the left over blended sauce as an emergency meal throughout the week. Freezes really well! Instead of putting veggies on the side of the dish - try throwing them into the dish and putting a sauce over the top.... How to: - Grill chicken breast in a pan - once browned on either side, cut into bite size pieces - Cut up any veg you have in the fridge and steam in the microwave - Boil some pasta - we used shells - In a large baking dish mix together chicken, veg and cooked pasta - Make a simple white sauce (olive oil/ butter, flour and milk) - Pour white sauce over the pasta in the baking dish and top with grated cheese - Bake at 180 degrees for around 20 minutes! You could also grate the veg or chop finely in a food processor. Issy’s Banana Muffins - 3 ripe bananas (mashed) ... - 2 eggs (whisked) - 1 cup sugar - 1 TBS cinnamon - 1/2 cup melted butter (I used nuttelex) (Combine) - 1 cup self raising flour (sifted in) - 1/4 block 70% dark chocolate (grated) (Fold in flour and chocolate to the wet ingredients) Then spoon out into muffin tray. Cook 180 degrees for 20mins Once finished, leave in tray for 5 mins. Then place muffins onto wire rack to finish cooling. We have got you sorted with a Berry Bliss Ball recipe from @delscookingtwist These ones are diary free and gluten free for those with food allergies or intolerances.... INGREDIENTS - makes 16 balls * 1 cup mixed berries - fresh or frozen * 3/4 cup gluten free oats ** * 1/4 cup coconut flour * 1/3 cup shredded coconut * 1 tbs coconut oil * 1 pinch salt * 1/4 cup maple syrup/ agave syrup METHOD: 1. Place all ingredients into a food processor and mix until you get a sticky dough. If too dry add a few drops of water. 2. With your hands or a small ice cream scoop, roll into balls. Optional: coat with shredded coconut or cocoa powder. 3. Let set in fridge for at least one hour before serving. Store in an airtight contained in the fridge for up to 1 week or up to 1 month in the freezer. ** Australia and New Zealand have the toughest labelling laws in the world; these have been set by the Australia New Zealand Food Standard’s Code. Pure oats are gluten-free and safe for most people with gluten intolerance. Here’s a couple of tips: offer small portions of the new food - don’t make it overwhelming... don’t try anything new when they are tired - the best learning happens when we all feel energised! serve new foods with ones they all ready enjoy let them use some tongs/spoons and serve their own - this makes children feel like they have the control describe foods in colours and textures and get you child to tell you what they can sense: hot vs cold, crunchy vs soft finally - don’t take refusal personally or feel defeated.
