From an early age he began to be interested in food due to the passion and tradition that exists in Basque country for good food and good produces. In 2014 he founded Paella Show, a Spanish catering company which operates in the Greater Sydney area. Jon creates dishes inspired by his hometown family recipes and by his many years in restaurants in London, Spain and Australia.... He loves to keep in touch with his roots and often go to the Sydneys Basque club where he usually cooks traditional basque food with a twist. 02.01.2022 Alfonso Als is a Chef/culinary teacher from Seville, Spain, who worked in some of the finest restaurants in Spain, Germany and France before settling his knives in the kitchens of Sydney and South Australia. His culinary qualifications include periods with the master of Eugenie les Bains in France, and 3 Star Michelin for 40 years, Chef Michel Guerard, and also with the revolutionary iconoclast Chef Ferran Adria in El Bulli Hotel, the world famous Museum Guggenheim- Bilbao... of Frank Gehry under the direction of the 3 Michelin Star Chef Martin Berasategui and the internationally acclaimed 2 Star Michelin French superstar Chef Thierry Marx, at Chateau Cordeillan Bages. Alfonso began his career in fine dining in Seville and then worked his way up in Relais-Chateaux hotels and Michelin starred restaurants across Europe. He is deeply influenced by his travels around the world cooking and surfing, and is strongly influenced by his roots in the Mediterranean culinary cultures of Southern Europe and northern Africa. 02.01.2022 We are going to start a new section called #MadeinSpain, where we will share our knowledge about Spanish products with everyone in Australia! Today we will start talking about ARROZ (rice) and we have the pleasure to count with food expert from Japan, Joaquin O Ponce Rodriguez: "Rice has been one of the key ingredients of our ancient culinary culture since the 8th century. Join me on this post to learn some historical facts about of one of the main ingredients of our motherla...nd, Spain. Introduced, in the Iberian Peninsula by the Arabs around the year 711 in Al-Andalus (Andalucia, South Spain) shortly started to spread to the Mediterranean side. The first areas to increase the presence of rice fields were Valencias Albufera (National Parc Albufera), and the municipalities surrounding of Catarroja, Ruzafa, Silla and Sueca. Thanks to the irrigation systems improvements brought by the Arabs and the increase of plantations during the upcoming centuries, the settlements growth from migrated people from the original Al-Andalus fields. Arroz, Spanish name for Rice, comes from the original Persians name "Orz" and the Arab particle "Al". "Al-Orz" evolved through the centuries to the word "Arroz" that appears for the first time, around mid 13th century, in one of the first translation from a collection of Arab histories requested by the King Alfonso X. Hard times came to the expansion of the Rice after the Christian reconquest. The view from the Christians as Rice being a Muslim food and the sanitary concerns regarding growing food in wetland, made nearly the extinction of production of Rice between the 14th until the 17th century, especially after the final expulsion of the Arabs in 1609. Some historical documents can be found talking about of increasing of population in the areas of Calasparra, Murcia and Valencia during mid and late 18th century making the starting point of the new and modern rice productions areas. This way the recovery of the fields and crops in the Mediterranean area increased with the new area of Murcia to their final expansion to the actual times. Today three areas of Rice production are the main D.O.P (Denomination of Origin): . Arroz de Valencia D.O. including the protected varieties Senia, Albufera and Bomba . Arroz del Delte de LEbre .
