24.01.2022 After hearing some beneficial things about black garlic we went about making our own. It takes so long for it to ferment and thankfully we had a garage as the smell is very strong for the first week and a half. We first used it to make some chicken and prawn dumplings, potstickers and dim sim. It was very nice but I felt we added a bit too much garlic but it was still very tasty. It tastes like sweet candy or tamarind, it tastes like garlic but you don't get the garlic breath afterwards. We kept some garlic bulbs aside for cooking and the rest we dehydrated it and grind it into fine powder. We are thinking to make some black garlic butter and the powder can be added to cooking or making black garlic pasta/noodles. Has anyone tried black garlic?

20.01.2022 Our dinner last night. This is our take on soy ramen noodle soup. We used pork and chicken bone to make the stock. The topping is seared koji chicken, braised and bbq pork ribs. It was really delicious and maybe we will have this on our menu soon.

16.01.2022 Our lunch today. This is our version of sushi but without the rice. The outer layer is wheaten starch, very similar to the texture of rice noodle rolls but a bit more chewier. We made 2 fillings. One vegan with king oyster mushrooms sauteed with our house made mung bean miso, pickled seaweed and sliced carrots. The second is king prawns, avocado and carrots with our housemade mayo. Both were very delicious and can't choose which one we liked more. Next time we will try other ingredients and see how they go. What do you think?

15.01.2022 Guess what we had for dinner tonight? The good old beef rolls. This was on our menu a few years ago and many people still request them. Maybe we can do a special beef roll day sometime soon. It was lovely and all gone in a matter of minutes.

The prices are: ~ pork and chives dumplings or potstickers: 10 pieces for $10.00 (includes our soy sauce) ~ vegan dumplings or potstickers: 9 pieces for $10.00 (includes our soy sauce) ~ beef pockets $5 each or buy 10 get 1 free... ~ beef noodle soup, $12.50 each serve. Soup and meat frozen in container and noodles will be uncooked so you can defrost and cook noodles when you want. ~ our house made chilli $5 a bottle. All made fresh so good to keep in freezer. For free delivery, minimum order $100 or near. This Sunday (22/03/20) we are intending to do a group pickup at Springwood Growers Market, location so no minimum order just message me what you want. 03.01.2022 We have been working on this soup for quite some time and we finally feel it's ready. This is our Taiwanese clear beef noodle soup. Very similar to our red braised beef noodle soup but more lighter flavour. It's very similar to the Vietnamese pho, but no lemongrass or fish sauce. We still slow cook the beef marrow bones, herbs and spices but we are using beef ribs instead of the brisket. Beef tripe is optional. Tomato is also optional some places add tomato and some don't we tried both liked them both. The noodles are the same rice noodles but the thinner version.
