20.01.2022 In his mid twenties Josh left Sydney on a whim, driving to Tasmania in hope of discovering himself without ties to place, friends and family. It was here he exp...erienced food, culture and was exposed to the profoundly beautiful natural environment. He found success in becoming a professional chef and cooking competitively on a national level. Never being interested in the trodden path, Josh explored food laterally, working for vineyards, orchards, oyster, beef and lamb farmers as well as becoming an artisan cheesemaker. He exposed himself first hand to the produce that is the cornerstone to our wonderful food scene. See more
19.01.2022 When we launched the eat the wild website waaaay back on a distant planet known as 2019, we faced a challenge. That was, how to visually communicate our story without having conducted any tours yet. The thought of purchasing stock photos made me do a little vomit in my mouth, and why the heck would we? eat the wild is anything but generic. Enter @lachy.jay, our good friend, wilderness man and relentlessly talented nature photographer who only a couple of years prior we kind ...of forced into shooting our wedding. Lachy stepped up and provided us with these beautiful landscape shots from across Tasmania, which without, the website would have sucked. Since then Lachy has expanded his skills to becoming a sought after event photographer through @dustandsaltphotography. It's impressive stuff. And this post is a big belated thank you for helping us out and providing a visual backdrop to tell our story, and giving eat the wild a stepping stone to build upon. Cheers. It's also an announcement that we finally have some photos on the way from a recent tour, captured by @loveherwildphotography. That certainly counts for Eat the Wild, as we chose an interesting year to introduce ourselves on the Tasmanian Food Tourism scene. 10.01.2022 Glazed and confused. For months I have been researching cups, mugs, glassware, keep cups, ceramics, enamelware...you name it. With very limited storage on Betty I became obsessed with finding a drinking vessel that could satisfactorily house any beverage. It's harder than you think. Then, just a couple of weeks ago at my fav @czegscafe chef Ferenc worded me up on local Richmond dude @vozargeorge and his mad pottery skills. I met with George the next day at his studio and a...greed upon these sexy little custom terracotta cups. It just felt right. I have been using one for my tea, whisky and wine and couldn't be happier. 08.01.2022 As an original and untested concept, there have been hurdles aplenty to get to the point of taking guests on a tour. Unfortunately, we discovered some work completed on the van was not up to standard. However, we are getting closer to having this remedied. For every frustration there have been at least two positives, not least meeting the awesome and skilled locals who want to see this succeed. At the very least this delay has allowed for some much needed TLC for the more traditional tools of the trade.

It's an absolute highlight (pun intended) on a day trip to Bruny Island. Eat the Wild is now one of only a select few tour operators granted access, something we are super proud of. . 07.01.2022 Lobster Ravioli, Sea Urchin Cream. Fresh Southern Rock Lobster meat folded through gently flavoured hot smoked salmon mousse of mascarpone and fresh herbs. Handmade Ravioli is infused with handpicked Saffron from our friends @tassaffron. For the sauce, a bisque reduction is made from the lobster shell and ocean trout frame left over from another dish. Stired through is a healthy serving of Grade A Sea Urchin Roe provided by #barillabayoysters. Finished with Double Cream, Ta...rragon, Chive and Dill. Garnished with Tasmanian Saffron. This weekend we took a very friendly group on a 6hr tour to four of the Coal Valley region's great vineyards @roslyn_1823 @noctonvineyard @uplands.vineyard and Pages Creek Estate.
