Hi friends, it’s Vegetarian Times instructor @nutritionsara here to share with you the perfect recipe to whip up when you need something healthy, and satisfying on the table fast. Consider it feel good comfort food at its finest. . Cozy Chickpea Zoodle Soup 1 tablespoon olive oil 2 (15-ounce) can chickpeas, rinsed and drained salt and freshly ground black pepper 2 cloves garlic, minced 1 onion, diced 3 carrots, peeled and diced 2 stalks celery, diced 1 1/2 cups mushrooms, cleaned and sliced 1/2 teaspoon dried thyme 4 cups good quality vegetable broth (I use Rapunzel) 1 pound (2 medium-sized) zucchini, spiralized 2 tablespoons freshly squeezed lemon juice 1 sprig fresh rosemary 2 tablespoons chopped fresh parsley leaves Heat olive oil in a large stockpot over medium heat. Add garlic, onion, carrots, celery and mushrooms. Cook, stirring occasionally, until tender, about 3-4 minutes. Stir in thyme and cook until fragrant, about 1 minute. Add in vegetable broth; bring to a boil. Stir in zucchini noodles and chickpeas; reduce heat and simmer until zucchini is tender, about 3-5 minutes. Stir in lemon juice; season with salt and pepper, to taste. INGREDIENTS... 1 1/2 cups Fresh Basil Leaves, lightly packed 4 Garlic Cloves 1/4 cup Pine Nuts (or nut of choice), lightly toasted & cooled 1/2 cup Freshly Grated Parmesan Cheese, plus more if needed Salt & Pepper, to taste 1/2 Cup Olive Oil, plus more if needed Add all the above ingredients to a food processor or blender and blitz until combined (but still chunky). Recipe: 4 large pieces of corn, husks removed... 1/2 cup sweet chilli sauce 3 tablespoons melted butter 1 cloves garlic, finely minced Juice of 2 limes Salt and black pepper Freshly chopped coriander, for garnish Method: 1. Prepare the chilli-lime butter: In a medium bowl, mix together chilli sauce, butter, garlic and lime juice and season with salt and pepper to taste. 2. Heat your grill to medium-high. Grill corn, turning every 2 minutes. Basting with a bit of chilli-lime butter from time to time, until tender and charred, 10 to 15 minutes. 3. Remove from grill and season grilled corn with more of the chilli lime butter.
