I've secretly been working on this project for so long and it's now live! The purpose of this blog is to have a central point for my recipes and content and to also make your life easier when searching for them. You can search by category or keyword! I'm also including links to some of the brands I used when making the recipes, for... your quick and easy reference... how good is that! My recipe blog is available in my bio x . Ingredients, serves 4: 500g chicken breast, cut into big chunks For the marinade: 250g plain Greek yoghurt, 1 tsp ground coriander, 1 tsp cumin, 1 tsp turmeric, 1/4 tsp black pepper, 1 tbsp garam masala, 1/2 tsp of ground ginger, 1.5 tbsp paprika, 1 tbs mixed, salt to taste, 1/2 lemon juice, 1 tbs minced garlic and 1 tsp tomato paste . Ingredients for the pumpkin rice, serves 4: 320g cooked brown rice (80g per serve) - approx 1/2 cup uncooked rice. 300g frozen cauliflower rice 600g Kent pumpkin, cut into small cubes 1 tsp turmeric, 1 tsp garlic powder, a pinch of black pepper and salt to taste . To serve: 160g plain Greek yoghurt, fresh chopped coriander, minced garlic to taste and 1/2 lemon juice. . Method: Mix all the ingredients for the marinade. Coat the chicken in the marinade, cover and refrigerate for at least 3 hours, preferably overnight! Pre-heat oven at 180C/350F. Line a large baking tray and place a rack on the tray. Place chicken on rack and bake for 20 minutes. Remove chicken from the oven, brush with the remaining marinade and bake for a further 10-15 minutes, or until the chicken is cooked through. To make the pumpkin rice, cook the pumpkin in the air fryer at 180C/350F for 15 minutes or 20-25 minutes in the oven. In a large pan, add the frozen cauliflower rice and cook until it becomes a little softer and tender, add the cooked brown rice and pumpkin, followed by the spices. Stir through to combine all flavours. Mix the yoghurt with the chopped coriander, lemon juice and minced garlic. Serve chicken with pumpkin rice, a dollop of yoghurt mix and lemon. See more
