23.01.2022 Early Morning Bird Symphony

23.01.2022 I love eating soup all year round and I find it quite comforting in the cold Winter months. This is one of my favourites at the moment. I call it the Orange Soup because of its beautiful colour. All what you need is: - 1 kg of carrots - 1 medium sweet potato - 1 onion - about 4 cloves of garlic... - 2 teaspoons of fennel seeds - half a peeled lemon - olive oil - sea salt and pepper - stock: 1 litre of water, ginger root, tumeric root, stick of lemongrass. Boil together for 20 minutes. - For added goodness: dehydrated chicken broth (optional) Preheat the oven to 200 C. Peel and roughly chop all vegetables. Combine them with the fennel seeds. Add the oil, mix well and spread them all on a large baking tray. Roast for 30-35 minutes, turning if necessary to prevent burning. When they are soft, remove from the oven and pour them into a blender with the stock. Blend on high until smooth. Taste and adjust seasoning. Serve and enjoy! Bon appétit! #wintersoup #cooking

This is where we noticed a large compost heap that was too far into scrubs to have been built by humans. The ground around the heap was so bare and black that it must have required a lot of hard and devoted work. 06.01.2022 Where’s the colourful Wattle this Winter? This is the only Wattle bush I’ve noticed in blossom, along my morning walk. Usually, towards the end of July and in August, Mount Campbell turns yellow and fragrant on the occasion. Nothing, this year, even though we had a bit of rain. We’ve noticed before that some of the bushes had suffered the effects of the drought and did not look very healthy? 04.01.2022 Bird Watching The last few months we did have a pair of grey coloured birds happily courting around our house with these amazing musical calls. As we were cleaning the gutters, we did discover their nest in the gutter guard with 4 little featherless baby birds. They managed to survive the recent showers of rain and safely kept growing in their nest under the care of their parents until a mean magpie went for them and pushed them to try out their flying skills in order to esc...ape. They haven’t come back to their nest since. They’re out into the forest now...I haven’t been able to identify them. There’s a short recording of their call in this video.
