23.01.2022 Buona Sera Tutti, we had a great day off yesterday and are ready to go for another huge week. One of the big questions we seem to be getting is if we do gluten free pizza... We use premium quality 00 flour which has the least amount of gluten content than all the others but is not however gluten free. Our yeast is vegan so anything without cheese or meat is vegan/vegetarian. All our ingredients are fresh and have no added preservatives, so you can rest assured that its a ...lot healthier than elsewhere. We are extremely grateful for not only your patronage over the last few months, but also for your feedback, both positive and negative... It has been a very long and to be honest difficult road to opening up the shop and providing the level of quality we want. Im sure we dont have to tell you all the difficulties of even living in Gladstone due to the extremes of heat and humidity, but some of you may know the difficulties it may cause the food ingredients and the final product and we at Edda strive to consistently provide food of the highest quality. In the many years of cooking in both Italy and other parts of Australia the Chef has never experienced such differences in the food every day One day its dry, the next day its wet; but we are not trying to make excuses but to let you know that we trying our hardest to give you the best and are very appreciative of both your patience and of any feedback, good and bad as it helps us to monitor the product and make the necessary changes. You may notice that we have changed our hours for the Christmas period as many lucky residents are more than likely going to be enjoying holidays elsewhere with loved ones and friends.
