24.01.2022 Tzatziki is so simple, and versatile. It’s one of those things you’ll never have to buy from the supermarket again once you know how to make it. It takes less than 5 minutes to make. 1/4 of a cucumber 1-3 cloves or garlic, adjust to taste 100-200ml of plain/Greek yogurt, adjust to desired consistency ... Dice cucumber, finely chop garlic, mix with the yogurt. Awesome with pan warmed pita bread as a snack, or on souvlakis.



22.01.2022 Breakfast Frittata! Today we made this beauty using home-grown spinach, rainbow chard, and oyster mushrooms. While you're on your journey to becoming more self sufficient it is important to remember that you are making progress - you cant make the switch to growing all of your ingredients overnight. Recipe: 200 grams of oyster mushrooms 1 french shallot... 3 cloves of garlic 1 bunch of silverbeet 1 bunch of spinach 3 sprigs of thyme 5 eggs Fetta cheese (even better if you made it yourself!) A splash of milk Butter & olive oil Salt & pepper Use a pan that you can place in your grill to finish off the frittata. Fry up the mushrooms and the french shallot. Add the garlic when the mushrooms are almost browned. Throw all the greens in there and stir until they start to wilt. Add the thyme now too. Crack the eggs into a bowl, add the milk, and season with salt & pepper. Whisk it all together. Pour the eggs over the wilted greens & mushroom mix, sprinkle fetta cheese over the top. Once the sides of the frittata have started to cook, place the pan under the griller. When the frittata is golden brown, and doesn't jiggle when you gently shake the pan, it is finished and ready to eat.

22.01.2022 Today we picked all of our broad beans... they were getting quite large! Now just need to come up with a delicious way to use them tonight for dinner...I am thinking a broad bean, lemon and feta salad, or in a nice creamy pasta. Broad beans or Vicia faba, are in the Fabaceae family. This means they act as nitrogen fixers of the soil putting in more nitrogen than they take out. They are very easy to grow and a great way for kids to start gardening as the large seeds are easy ...to plant, quick to germinate and fairly hardy. When finished with the plants and you want to remove them from your garden bed, cut close to the ground and leave the roots in to rot to add in more nitrogen and nutrients to the soil. Some people grow these to "chop and drop" when young and soft to use as green manure. However, if left to mature, the stems can be a bit woody so best to compost these and spread just the green leaves over the garden bed instead which will break down and improve your soil

18.01.2022 PLANTING IN DECEMBER! Gardening is different for each state of Australia and for Tasmania that is especially true. We have cooler weather, different soil types and then within Tasmania this is true for the different regions. This is a general guide to what you can start planting this coming December (in three days!). For these it is best to directly sow the seeds into the soil to avoid transplanting seedlings later on and disturbing the delicate root system too much. ... WHAT TO PLANT - December: - Lettuce, cabbage, broccoli, english, spinach, carrot, zucchini, cucumber. Second half of December: Brussels sprouts, kale, autumn cauliflower. Happy planting!

By growing your own food you become resilient to economic failure, supply chain failure, and a whole range of other issues.... Not only that, but you know where your food came from, that it's pesticide free (if you're so inclined), and that it is fresher, and more nutrient dense than store-bought vegetables.
