25.01.2022 Sometimes just the easiest things....are sometimes the most impressive. This could easily be made Gluten-free by using a gluten-free chocolate biscuit. CHOC CHERRY RIPE SLICE... Base: 250g plain chocolate biscuits (Chocolate Ripple are ideal) 100g butter, melted Filling: 1& 1/2 cups dessicated coconut 200g red glace cherries, chopped 395g tin sweetened condensed milk Few drops red food colouring Topping: 150g dark chocolate 30g butter - Preheat oven to 180degC (160degC fan). Line a 18cm x 28cm slice pan. - Crush biscuits in food processor, tip into a bowl and add melted butter, mix well. - Spoon into pan, firmly press down evenly. Place in fridge while making filling. - Make filling: Mix coconut, condensed milk and chopped cherries together. Add drops of colouring one at a time, mixing in between, until desired colour reached. - Spread the filling evenly over the base and bake for about 25mins or until the edges begin to brown. - When cool, make topping: Melt chocolate and butter by microwaving together for 1 minute at 50% power, stir, then in 30 sec. bursts, stirring in between, until melted. - Spread chocolate evenly over the slice. - Create a ripple effect by dragging a butter knife through the chocolate. - Sprinkle with lines of pink coconut. NOTE: To make pink coconut....Add 2 - 3 drops of red food colouring to 1/4 cup of coconut, mix well.

22.01.2022 The recipe for this slice, which is basically just a glorified Lolly Slice, originally came from the Black Swan Cafe, Waihola, Otago. It's not necessary to turn it out upside down, so the chocolate is on the bottom, and decorate the top....it just looks more fancy that way. LICORICE ALL-SORT SLICE... 125g butter, chopped 160ml (2/3 cup) sweetened condensed milk 1 tab golden syrup 1 pkt. (250g) plain biscuits ( I usually use Griffin's Malt Biscuits, found here in NZ section at Coles), but any will do. 45g (1/2 cup) coconut 375g licorice all-sorts 180g dark chocolate 30g butter, extra Extra dark chocolate, to drizzle - Line a baking tin, 18cm x 28cm. - Crush biscuits, put in large bowl, mix in coconut. - Melt butter, condensed milk & golden syrup together, pour over biscuits & coconut. Mix. - Coarsely chop 300g of the licorice all-sorts, add to biscuit mix, mix well and press into pan, allow to set. - Melt 180g dark chocolate & the extra 30g butter, spread over biscuit mixture. ( I do this in the microwave, 1 min at 50% power, stir, then in 20sec. bursts, stirring until melted). - When set, turn slice out onto a board, so chocolate is on the bottom. - Melt about 50g extra of dark chocolate and drizzle over slice. Press left over all-sorts, cut tinier, into the drizzled chocolate before it sets. NOTE: To drizzle, I just spoon the melted chocolate into a plastic sandwich bag, and snip one corner.

20.01.2022 We felt like something savoury, something a bit different for lunch. And I love cheese , I think I must have been French in a former life These are yum if you're a cheese fan too, eat them warm or cold, with butter. And they freeze well too!... CHEESE PUFFINS Makes 12 1 & 1/2 cups plain flour 3 tsp baking powder 1/2 tsp salt 1 tsp mustard powder 175g grated tasty cheese 1 cup milk 1 egg - Preheat oven to 230degC (210degC fan). - Sift together flour, baking powder, salt and mustard. - Add grated cheese. - Beat together milk and egg. - Stir liquid into dry ingredients until just mixed. DO NOT OVERMIX. - Fill well-greased muffin tins about 2/3 full. - Bake 10 - 12 minutes or until risen and golden brown.

20.01.2022 Happy! I have finally got this right! Lots of internet videos, different recipes, and stopping myself from over-swirling at the end, and I'm quite chuffed with these. And they taste soooo good too! CHEESECAKE SWIRL BROWNIES... 150g butter, chopped 300g dark chocolate 3 eggs 140g caster sugar 225g plain flour 65g sour cream 250g pkt. cream cheese, at room temp 75g caster sugar, extra Chocolate chips to sprinkle, optional - Preheat oven to 180degC (160degC fan). Line tin about 18cm x 28cm, or 23cm x 23cm. - Combine butter and chocolate, melt in microwave at 70% power for 1 minute, then at 20 - 30sec intervals, stirring after each, until melted. Cool slightly. - Whisk 2 of the eggs in a small bowl. Add to the chocolate mixture with first measure of sugar, stir to combine. - Add the sifted flour, and sour cream, stir well. - Add all but about 1/2cup of mixture to the pan. - Beat cream cheese and 2nd sugar mixture until smooth. Add remaining egg and beat until just combined. - Dollop over top of mixture in pan, then dollop remaining chocolate mixture here and there between. - Swirl with a knife to create marbled effect. DON'T OVERSWIRL. - Drop some chocolate chips on top if desired. - Bake about 30 - 35 minutes.



19.01.2022 This is a really delicious lemon slice recipe, we used to make this in the cafe in Tirau. My friend and workmate, Karen, provided this recipe from her Every Girls' Rally cookbook. LEMON SLICE CAKE ... 125g butter, softened 125g sugar 1 egg 250g plain flour 1 tsp baking powder Filling: 1 cup water 1 cup sugar 1 tab butter 3 rounded tabs. custard powder Rind of 1 large lemon, finely grated 40 - 45ml lemon juice - Cream butter and sugar until light and fluffy, add egg, beat well. - Sift flour and baking powder, stir into butter mixture, bring together into ball, divide in half. - Press half into lined 18cm x 20cm tin. - Make filling: In a pot, put water, sugar, butter, custard powder and rind, whisk together, bring to boil, stirring constantly. - Lower heat, simmer for 2 minutes, stirring constantly. - Remove from heat, whisk in lemon juice, pour over shortcake, spread evenly. - Roll out other half on baking paper, flip and place on top. ( I marked the size of the tin on the baking paper as a guide). If you want, just place pieces of topping on filling spasmodically, don't worry about small gaps. - Bake at 180degC (160degC fan) for about 25 minutes. - When cool, ice with lemon icing.

19.01.2022 Vanilla Slice is not my specialty, I can't sell it at the market because of health regulations, I don't have cold storage. A couple of days ago, a customer ordered some, I said it's been a while, but I'll give it a go. Well, 3 goes later, through trial and error, I think I have it sussed. I learnt... (1) Don't use thickened cream ( the recipe just called for "cream")....use pure... cream (2) When the custard mixture starts to boil, whisk at least a minute, and then whisk some more...that whisk needs to just about be able to stand up on it's own in the thick custard. VANILLA SLICE 2 sheets frozen puff pastry 250g caster sugar 90g cornflour 60g custard powder 3 cups milk 1 cup pure cream 60g butter 2 tsp vanilla essence 3 egg yolks ICING : 1 &1/2 cups (225g) icing sugar, sifted About 2 tabs milk 1 tsp vanilla essence - Preheat oven to 200degC (180degC fan) and defrost pastry sheets. - Line 2 baking trays and lay the pastry sheets on top, prick all over, then place another baking tray or pan on top to prevent pastry rising too much during baking. - Bake for about 20 mins, or until the pastry is golden. Remove from oven and allow to cool completely. - Line a shallow 23cm sq. tin with aluminium foil, extending over sides. I lined with baking paper as well. - Trim one pastry sheet to fit, and place in tin, top side down. - Combine sugar, cornflour & custard powder in a pot, then gradually add half the milk & whisk until smooth. - Add the rest of the milk & the cream and whisk over med. heat until the mixture boils and thickens. You'll need to whisk maybe a few minutes, needs to be really thick. - Reduce heat to low, add butter & vanilla and whisk until butter is melted and mixture is smooth. - Remove pan from heat, then whisk in egg yolks until combined. - Spread vanilla custard over pastry in tin, then place the second pastry on top, top side down, and allow to cool. - VANILLA ICING: Combine icing sugar, vanilla essence and milk, mixing until smooth, then spread over the top of the pastry. Chill in fridge, ideally for at least 6 hours, before cutting.

17.01.2022 These are the Neenish Tarts of my NZ childhood....the ones with the delicious lemony, condensed milk filling, not the awful mock cream filling of today's version...though I realise many people like them that way. Making these gave me a chance to use my ancient patty tin again, and I realised it is stamped, manufactured by BonCo, in Auckland (see pic). I've had it about 45 years. NEENISH TARTS Makes 24... 125g butter, softened 1 cup sugar 1 egg 2 cups plain flour 1 tsp baking powder FILLING: 75g butter, softened 1/2 cup icing sugar 1/2 cup sweetened condensed milk 2 tabs lemon juice 1 tsp grated lemon rind ICING: 1 & 1/2 cups icing sugar 2 - 4 tabs milk 1 - 2 tabs cocoa - Cream butter & sugar until light and fluffy. - Add egg and beat well. - Sift flour and baking powder, add to creamed mixture. - Knead lightly, shape into two balls, wrap and chill for 15 mins or longer. - Roll out one pastry ball, between two strips of baking paper, to 5mm thickness. - Cut into 7cm diameter circles and line sprayed patty tins. - Prick the base of each lightly with a fork three times. - Repeat with other chilled ball of dough. - Bake at 180degC (160degC fan) for 10 to 12 minutes, until light brown. - Remove pastry cases to a wire rack. - When cold, fill and ice. FILLING: - Beat butter & icing sugar until smooth. - Add condensed milk, lemon juice and rind. Beat well. - Place 2 to 3 tsp of filling in each case. - Allow to set in fridge. ICING: - Put icing sugar in a bowl, add milk and mix until spreadable. - Spread half of the top of each tart with icing. - Allow to set in fridge. - Add cocoa to remaining icing, mix until smooth. - Spread chocolate icing over remaining half of each tart. Allow to set.

08.01.2022 Lemon Meringue Pie in a SLICE! Yum LEMON MERINGUE SLICE ... 1 & 1/2 cups plain flour 1/2 cup icing sugar 150g cold butter 1 tsp cold water 395g can sweetened condensed milk 2 eggs, separated 1 egg white, extra 2 tsp grated lemon rind 1/2 cup lemon juice 1/3 & 1/6 caster sugar ( just another way of saying 1/3 cup plus half of 1/3 cup measure) Shredded coconut to sprinkle - Put flour, icing sugar, butter & water in food processor, process until the ingredients cling together. - Bring mixture together and press into lined 20cm x 30cm tin (Swiss roll pan ideal). - Bake at 180degC (160degC fan) for about 15 mins. - Combine egg yolks, condensed milk, lemon rind and juice in a bowl. - Pour over cooked base, bake for a further 8 mins. - Beat the 3 egg whites until soft peaks form, slowly add caster sugar, beating until stiff and sugar dissolved. - Spread over lemon filling, sprinkle with shredded coconut. - Bake a further 10 mins.

07.01.2022 This Chocolate Caramel Slice is one of my most popular slices at the market. I make two large trays, and they don't last long. I do this in a 31cm x 25cm pan, but the recipe can be halved easily and baked in a smaller pan. If you like thick caramel, don't halve the filling. I was told by one happy man that " dis is da bomb!"... CHOCOLATE CARAMEL SLICE 2 cups plain flour 1 cup brown sugar 1 cup coconut 250g butter, melted Caramel Filling: 2 cans sweetened condensed milk 4 tabs golden syrup 120g butter Topping: 40g butter 180g dark chocolate - Mix all base ingredients well. Press into lined pan about 31cm x 25cm pan. - Bake at 180degC (160degC fan) for 18mins or until lightly golden. - Remove from oven, cool for 5 - 10mins. Make filling: Combine all ingredients in a medium pot. Bring to boil over med. heat, stirring CONSTANTLY. - Once boiling, turn down heat and stir CONSTANTLY for 8 minutes. Pour over cooked base, spread evenly. - Bake for 5 minutes, cool completely. - Make topping: Melt butter and chocolate in microwave, for 1 minute at 50% power, stir, then in 20 - 30sec. bursts at 50% power, stirring after each, until chocolate is melted and smooth. - Pour over cooled slice and spread evenly.

07.01.2022 Lolly Cake is part of the staple diet in NZ, and there's not a cafe or bakery you won't find it. A Kiwi customer at the market, earlier this year, asked me for the recipe, so obviously not every Kiwi knows it. So here it is! Griffin's Malt Biscuits are the best to use, most Coles here have them in the NZ section. Malt-O-Milk are ok, as are any other similar biscuit. Eskimos and Fruit Puffs can be hard to come by, usually found at markets, some lolly shops and Kiwi shops. ... A friend found me a heap of yellow and white ones on his delivery run around Melbourne....NO, they did not fall off the back of a truck! Banana Lollies are quite a good substitute. LOLLY CAKE 120g butter 1/2 tin sweetened condensed milk 1 pkt. (250g) malt biscuits, crushed 225g Eskimos, Fruit Puffs or similar Dessicated coconut - Melt butter with condensed milk in microwave. - Cut up Eskimos into bite-sized chunks (about 6 pieces). - Mix butter, condensed milk, crushed malt biscuits and lollies together. - Bring together, turn out onto bench, form into a log shape, cover or roll in coconut. - Chill in fridge until firm, cut into slices.

07.01.2022 I had a heap of ripe bananas, so decided to use them today by trying a new banana cake recipe. First batch I made a Banana Cake, and iced it with cream cheese icing. Second batch I made 12 Banana Cupcakes and 6 Mini Banana Loaves. The loaves I swirled a tsp of Nutella on top and sprinkled a few frozen raspberries on top as well....they sunk as it cooked, but I don't think it matters. I used Chocolate Buttercream Icing on both. The recipe can be halved, which will give you ...12 cupcakes. BANANA CAKE or Mini Loaves or Cupcakes 125g butter, softened 1/2 cup (110g) caster sugar 1/2 cup (110g) brown sugar, firmly packed 2 tsp vanilla essence 2 lg. eggs 1 cup mashed, ripe bananas (2 - 3) 100g buttermilk 1 & 1/2 cups (225g) self-raising flour 1/2 tsp baking soda 1/2 tsp cinnamon 1/4 tsp salt - Preheat oven to 180degC (160degC fan). Grease & line base of 20cm round tin. - Cream butter until smooth and creamy. - Add sugars and vanilla essence, beat for 3 - 5 minutes until lightened in colour. - Add eggs, one at a time, mixing to combine. - Stir in mashed banana and mix to incorporate. - Sift together flour, baking soda, salt and cinnamon. - Add half the flour mixture, followed by half the buttermilk, mixing to incorporate. - Add most of remaining flour, then buttermilk, then last of flour, mixing between each. - Pour into prepared tin and bake for about 50 minutes. NOTE: Make sure butter, eggs and buttermilk are at room temp. - 1/2 cup choc chips or nuts can be added. - Cooking time for cupcakes was about 18mins & mini loaves about 20mins.

Tried these cookies today, they are nice, but would have been even nicer with maybe another half block of chopped Caramilk in them! CHOC CARAMILK COOKIES ... 130g butter, softened 1/2 cup caster sugar 1/2 cup brown sugar 1 egg, room temp 1 tsp. vanilla essence 1 & 1/4 cups flour 1/3 cup cocoa 1/2 tsp. baking soda 1/4 tsp. baking powder 180g block, or more, Caramilk Chocolate - Preheat oven to 180degC (160degC fan). - Chop Caramilk into small chunks and set aside. - Cream butter and both sugars. Add egg and vanilla essence and beat well to combine. - Sift dry ingredients, add to butter and sugar mixture and stir till combined. - Add chopped Caramilk and stir into mixture until evenly combined. - Roll into small balls and place on lined trays, flatten slightly. I got 20 cookies @ 35g. - Bake about 15 mins.
