Here are another two great little recipes: ednr cinnamon fig muesli muffins - a suggestion from one of my lovely regular customers at the #farmersandfoodiesmarkets and tea infused ednr raw muesli crumble - inspired by Canberra's own #endeavourtea company. recipes below.

21.01.2022 Penny University, Kingston. Still my favourite Canberra cafe, and with a new menu from this weekend, featuring ednr muesli in two dishes. Many ingredients are made in-house, and they also support many local businesses with a range of other ingredients. Oh, and they do a pretty good coffee too! Where are you having breakfast next weekend?!?

03.01.2022 Some good but sad news: I’ve decided to shut up shop for ednr. Largely as a result of time management issues, priorities and life just getting in the way as it does for all of us! I established ednr at a time in my life when I was at a bit of a cross-roads personally and professionally and in need of a new challenge and a new direction. I was also wanting to find a way to make a more positive contribution to health and wellbeing of our community and society.... ednr fulfilled this challenge perfectly, and has been an amazing journey from which I’ve learnt a lot about business, marketing, nutrition and finance. But more than anything else, I’ve learnt so much about the importance of relationships. I’ve met wonderful people, and been overwhelmed by the support, interest and encouragement from local business, and from friends, family and customers near and far. I really appreciate this, and couldn’t have started, let alone continued the journey without it. Words of encouragement, feedback, repeat business and consistent sales across retail outlets has meant a lot for me. I’ve recently started a new full time job, which I’m loving, and which provides me with a similar sense of purpose for community health and wellbeing. I’m passionate about the position and wanting to contribute as much as I can in this space. I also hope that the position provides me with a greater opportunity to make a difference than I think I could achieve with ednr. Along with ironman triathlon training, the time has unfortunately come that something has had to give and, unfortunately, ednr is it. Saying thanks and goodbye to all my retailers over the last couple of weeks has been like breaking up over and over again, and has been 100 times harder than approaching them in the first instance to introduce myself and my products which, as an introvert, was initially quite daunting and a huge step outside of my comfort zone. Mostly, I’ve loved every minute of ednr it’s been incredibly hard work, and there are times I’ve sacrificed a lot for it, been under a lot of pressure and stress, and poorly prioritised other areas of my life. However, it’s been an incredible experience; and one of which I’m incredibly proud. One of my greatest achievements is to have had my muesli on the menu at one of Canberra’s very best and hippest cafes @PennyUniversity. It will remain on the menu here for the foreseeable future for now, so get in while you can!! The good news is that I’m really comfortable with the decision, am happily doing what I’m doing, looking forward to a little more time to relax and socialise, and there are so many great healthy, real food, nutritious options out there now!
