Enjoy Ingredients:... 1 1/2 cups self-raising flour 1 tsp baking powder 1/2 cup golden castor sugar 1/3 cup Edwards Filtered Cold Pressed Canola Oil 2 Tbsp apple sauce 1 tsp vanilla extract 1/3 cup pineapple juice 1/3 cup coconut milk 1/2 cup shredded coconut 1 small mango diced (100g) Instructions: 1) Preheat the oven to 180 2) Put the self-raising flour, baking powder and golden castor sugar into a bowl and mix well. 3) In a separate bowl mix together the oil, apple sauce, vanilla extract, pineapple juice and coconut milk. 4) Mix the wet ingredients into the dry ingredients and then stir through the shredded coconut and the fresh mango. Line a loaf tin with oil and pour in the mixture. Garnish with fresh mango and sprinkle some more golden castor sugar on top if desired. 5) Bake for 40 to 45 mins at 180 or until a skewer comes out clean. Let cake cool completely before cutting. Ingredients - ragu: 2 tbsp @Edwardsoil 'First Pressed' 600g beef mince... 1 onion roughly chopped 2 sticks celery diced 1 carrot diced 2 garlic cloves, crushed 2 level tbsp plain flour 300ml beef stock 2 tbsp tomato paste 1 tbsp chopped thyme 1 x 400g cans chopped tomato Ingredients - white sauce: 50g @Edwardsoil 'First Pressed' 50g plain flour 750ml hot milk 1 tbsp grated nutmeg 50g Parmesan finely grated Salt and freshly ground black pepper Ingredients - lasagne: 1 pack lasagne sheets softened in water or fresh lasagne sheets 1 cup grated cheddar cheese Instructions - ragu: 1. Heat a large frying pan until hot and add the oil. Cook the mince until browned all over. Remove from the heat and transfer to a plate. Add the onion, celery, carrot and garlic to the pan and cook until softened. Return the meat to the pan and stir in the flour. Add the stock slowly to avoid lumps, add the tomato paste and thyme, then stir well. Stir in the canned tomatoes. Bring to boil, cover and simmer for 45 minutes to 1 hour or until the beef is tender. Transfer to a blender and pulse until any chunks are smooth. Instructions - white sauce: 2. Melt the butter in a saucepan. Add the flour and cook over the heat for one minute. Gradually whisk in the hot milk, whisking until thickened. Add the nutmeg and parmesan cheese and season well with salt and pepper. Instructions - lasagne: 3. Put one third of the meat sauce in the base of a 20cm by 20cm ovenproof dish. Spoon one third of the white sauce on top. Arrange one layer of lasagne sheets on top. Season. Spoon half of the remaining meat sauce on top and then half of the white sauce. Put another layer of lasagne sheets on top, then the remaining meat sauce and remaining white sauce. Sprinkle over the cheddar cheese. 4. Preheat the oven temperature to 200C/400F/Gas 6. 5.
