25.01.2022 Hey foodies, At this time of year we tend to be feeding the masses, here's a simple side dish that will be a big hit! BBQ Asparagus & Prosciutto... 10 slices prosciutto, halved lengthways 20 (about 2 bunches) asparagus spears, woody ends trimmed diagonally Olive oil spray Step 1 Wrap a slice of prosciutto around each asparagus spear. Step 2 Preheat a barbecue grill or chargrill pan on high. Spray the asparagus lightly with olive oil spray. Cook on grill, turning occasionally, for 3-4 minutes or until the prosciutto is golden and the asparagus is bright green and tender. Transfer to a serving platter to serve. 19.01.2022 Hey there Foodies, The recipe I have for you today is so good it will become a regular in your house. Lite and easy but full of flavor. Dukkah Crusted Lamb Salad.... 3 teaspoons olive oil 1 small red onion, diced 2 garlic cloves, crushed 150g pearl couscous 1 cup boiling water 200g red cabbage, shredded 4 (450g) lamb leg steaks 1 tablespoon pistachio dukkah 1/2 x 250g punnet grape tomatoes, halved 30g baby spinach 75g reduced-fat feta cheese, crumbled 1/3 cup low-fat Greek-style yoghurt 2 tablespoons fresh mint leaves, chopped Step 1 Heat 2 teaspoons oil in a saucepan over medium heat. Add onion and garlic. Cook, stirring, for 3 to 4 minutes or until softened. Add couscous. Cook, stirring constantly, for 1 minute or until coated. Add boiling water. Simmer, covered, stirring occasionally, for 6 minutes or until couscous is just tender. Stir through cabbage. Cover. Set aside. Step 2 Press dukkah onto steaks. Heat remaining oil in a frying pan over medium-high heat. Cook steaks for 2 to 3 minutes each side for medium or until cooked to your liking. Transfer to a plate. Cover with foil. Set aside for 5 minutes. Step 3 Stir tomato, spinach and feta into couscous mixture. Combine yoghurt and mint in a bowl. Serve steaks with couscous mixture and yoghurt mixture. 19.01.2022 Hi all, We are just one more sleep away from returning to the club! The Club has now been cleaned from top to bottom and is ready to go!... I am super excited to get back in there and see you all again. For those of you who are not returning straight away do not fear, as you all know I will still be posting and running Zoom sessions from the club at 8am and 4:30pm. Those of you who still have equipment. I have received some of the equipment back which is great. If you do still have equipment I will ask you to return it by the end of this week. In saying that, please make sure you have cleaned it all and please chat to me if anything you have borrowed has been damaged. I have received a few items that have been damaged which I understand can happen but please let me know. Bookings If you have not yet booked a session please get onto it. As you know we HAVE to book in for each session you wish to attend. Please try to avoid walking into the club without booking. If you arrive at the club without a booking you will have to go into the Booking Link and do it before you can start your workout. This is to ensure I have an accurate record of who was in the club at what time. This is a requirement to be able to open the club. As I said earlier, I can not wait to see all again and get back to some sort of normality. If you do have ANY issues of questions, please contact me. Coach Mike

15.01.2022 Hey there foodies, This is a dish I put together a few years ago, it was amazing! 9 chicken legs... 1/2 green, yellow, red capsicum 3med carrots 1/2 butternut pumpkin 10-12 Brussels sprouts 3cloves garlic 1 cup chicken stock, home made if possible 1tsp paprika 1tbl olive oil Put your chicken legs in a plastic bag, add your paprika and a pinch of salt and pepper. Tie off the end leaving some air in the bag. Roll around to coat. Set your oven to 190o You need a large, deep dish with a lid, that you can use in the oven and on the stove top. Heat your dish over a med flame and add your oil. When ready add your chicken. Brown on all sides but don't cook through. Remove and set aside with all the juices. Return the pan to the heat and add your chopped pumpkin and carrots. Then add your whole brussles and garlic gloves. Cook for 5mins stirring. Add the chicken and the juices to the pot and cover with stock. Add your rosemary sprig and chunky chopped capsicum. You may need a little water to top up. Transfer to the oven and cook for 1hr. Until all the veg are cooked and the chicken falls of the bone. Enjoy Coach Mike

04.01.2022 Hi there guys and girls, Today I have for you an amazing little salad that is very hard to stop eating! Pea, Corn and Chorizo salad!... INGREDIENTS 1tsp oil 1 chorizo, quartered lengthways, thinly sliced 1 small red onion, thinly sliced 1/2 teaspoon smoked paprika 1 cup of corn 1 cup of peas 200g cherry tomatoes, halved 1/3 cup chopped fresh coriander leaves 2 tablespoon lime juice Heat the oil in a good fry pan over medium heat and add chorizo. Cook, stirring, for 2 to 3 minutes or until golden. Add onion and paprika. Cook for 2 minutes until softened. Add frozen peas and corn. Cook, stirring, for 2 to 3 minutes or until tender and heated through. Remove from heat. Stir in tomato, coriander and lime juice. Season with salt and pepper. Toss to combine. Serve.
