22.01.2022 Hibiscus Sorbet Ingredients 2 cups water 1 cup hibiscus flowers 1 cup sugar... 1 tbsp fresh lemon juice 1 tbsp fresh lime juice ice cream (maker) Bring water to a boil in a small saucepan. Stir in hibiscus and remove from heat, then let steep 15 minutes. Pour hibiscus tea through a fine-mesh sieve into a metal bowl, pressing hard on and then discarding solids. Return tea to saucepan and bring to a boil with sugar and a pinch of salt, stirring until sugar is dissolved. Transfer mixture to a metal bowl, then set bowl in a larger bowl of ice water and stir until cold, 10 to 15 minutes. Stir in lemon and lime juices and freeze in ice cream maker. Transfer sorbet to an airtight container and put in freezer to harden, at least 2 hours. Hibiscus Flower Ice Cream ( optional with Chocolate Bits) ingredients 1 tbsp dried hibiscus flowers 250 ml whole milk 250 ml heavy cream 100 g sugar 4 egg yolks 50 g sweetened condensed milk 1 Tbs Cointreau 70 g semisweet chocolate - optional Mix the milk and the cream in a saucepan, bring to a boil, add the dried hibiscus flowers, let simmer for 1 minute, then remove from heat, cover and let infuse for 30 minutes. Filter the infusion to separate the flowers (squeeze the flowers well). Bring the milk/cream mixture to a boil again. In the meantime whisk the egg yolks and the sugar in a bowl. Add the hot milk, slowly and carefully, whisking the yolks all the time to prevent them from curdling. Pour everything back into the saucepan and cook on low heat stirring constantly until the custard starts coating the back of the spoon or reaches 80-82C. Remove from heat immediately and pour the custard into a clean bowl placed in a slightly bigger one filled with cold water and ice. Let the custard cool down to room temperature stirring it every now and then. When the custard's cold, stir in the liquor and the condensed milk. *Condensed milk may be omitted but I've noticed it makes ice creams creamier and it gets less hard once you freeze it. However, if you'd like to add it but also want less sweet ice cream or with the more pronounced note from hibiscus flowers, reduce the sugar in custard. Transfer the custard into the fridge for at least 4 hours, still better over night. When the custard is well chilled pour it into your ice cream maker and churn according to the instructions. Melt the chocolate. When the ice cream is ready, with the machine still on, add the melted chocolate pouring it in a thin streak. The chocolate will harden immediately in contact with ice cream and break into small crunchy pieces. Transfer the ice cream into a freezer safe container and freeze for a couple hours before serving. Serve this ice cream plain or with chocolate sauce.

Great for making Cordial, Iced Slushies, Berry Smoothies, Home made Ice-Blocks and exquisite Fruit Compote. The uses for this Syrup is only limited to your imagination Ingredients ... 2 cup water 1 1/2 cup sugar cup of Hibiscus Juice of a Lemon or/and orange This is how I make Cordial - depending on how much I want to make... in a large pot 4 to 6 litres of water 200g to 400g of Egyptian Red Hibiscus 3 to 5 cups of sugar Juice of 3 lemons and 2 oranges (I put the squeezed oranges and lemons in the pot as well) Combine water, sugar, hibiscus and squeezed lemons and oranges in a small saucepan; bring to the boil for 5 min or so, stirring until sugar is dissolved. Add juice then simmer for half and hour. Remove from heat; Squeeze the lemons and oranges, let steep until cool. Strain pushing all the moisture from the hibiscus; cover and keep chilled. Transfer to an airtight container and refrigerate for up to a month. Can be used to simmer fruit of any kind - add your favorite thickener to make a thicker syrup. Add to ... Sparkling Water, Tonic or Soda Water or Soda Stream for a healthier summer soft drink or just add water and ice for cordial. Crush up some ice and top with the syrup - the kids will love it. Don't throw out the Hibiscus flowers, they taste great - Take the Hibiscus that you strained add to blender and use over ice-cream or yoghurt with a drizzle of the syrup you made Delish! *Seems like allot of sugar, but when you are adding water the ratio is very different. Sugar is a natural preservative and I have found that the cordial will last longer than 1 month.
