Add the green onions and asparagus and saute until just tender, about 2-3 minutes. Add the tomato and cook for one more minute. Pour in the egg mixture and cook until the eggs begin to set but don’t burn for approximately about 4-6 minutes. Sprinkle top with remaining feta cheese and place in the oven. Bake for 8-12 minutes until eggs are completely set and cooked through. Ingredients HEALTHY TERIYAKI SAUCE 1 tablespoon sesame oil 1/4 cup tamari sauce or soy sauce 1/2 tablespoon Dijon mustard 2 tablespoons sesame seeds (white, black or a mix) 1 tablespoon honey or stevia if on VLCD SALMON 1 carrot or sweet potato , cut into rounds (about 1/3-inch thick) 1 head broccoli, cut into florets 2 tablespoon olive oil 1 tablespoon sesame seeds salt, to taste 2 salmon fillets Preparation For the teriyaki sauce: Place all of the marinade ingredients in a bowl. Whisk until combined. Set aside. For the salmon: 1. Preheat the oven to 180CLine a baking tray with parchment paper. 2. Place the carrots or sweet potato and broccoli on the outskirts of the baking tray (leaving room in the center for the salmon). Drizzle with olive oil and toss to coat. Chiang Mai Chicken Curry Noodles Cooking Time: 15 Minutes | Serves: 4 Ingredients 2 tbs grapeseed oil 1 onion, thinly sliced 1 clove garlic, crushed cup red curry paste tsp curry powder tsp ground turmeric 1 cup light coconut milk 1 cup salt-reduced chicken stock cup fish sauce 2 chicken breasts, sliced into thin strips 2 tbs light soy sauce 2 tsp lime juice 1 packet Slendier Soy Bean Spaghetti cup coriander leaves, roughly chopped 2 spring onions, finely sliced 1 long red chilli, split and finely sliced fried shallots, to garnish Directions Place a large non-stick wok over mediumhigh heat. Add the oil, onion, garlic, curry paste, curry powder and turmeric and stir fry briefly until onion is just soft, about 1 minute. Add the coconut milk, chicken stock and fish sauce and stir to combine. Bring to the boil, then reduce heat. Add the chicken strips and simmer until cooked through, about 6 to 7 minutes. Stir in the soy sauce, and lime juice. Season to taste and adjust flavour if required. Keep warm until needed. Prepare the Soy Bean Spaghetti according to the directions on the packet. Drain and divide between 4 noodle bowls. Spoon chicken curry mixture over the noodles. Top with coriander leaves, spring onions and chilli. Garnish with fried shallots and serve.

16.01.2022 Need hearty low carb soup recipes! Type Yes in comments Low Carb Avgolemeno (Greek Chicken, Lemon & Egg Soup)... It’s been rainy and dreary here in Melbourne for the past week, and today was no exception. It was the kind of day that just screamed for chicken noodle soup, but without the noodles (or rice, or potatoes) it’s just chicken soup, and not nearly as satisfying. Had heard about Avgolemeno, a traditional Greek chicken soup made with lemon and eggs whisked into it, and always wanted to try it if only because the name is cool. It’s typically made with rice or orzo, but I thought let’s put a low carb twist on it by serving it with spaghetti squash instead. INGREDIENTS 4 cup cooked, shredded chicken 10 cup chicken stock or broth 3 eggs 1/3 cup fresh lemon juice 2 cup cooked spaghetti squash 1/4 cup fresh parsley, chopped salt and pepper to taste INSTRUCTIONS Add the chicken and broth to a large saucepan and bring to a boil. Remove from the heat. In a medium bowl whisk the eggs and lemon juice together until frothy. Slowly whisk 2 cups of hot stock into the egg mixture don’t just dump it in or you’ll end up with scrambled eggs! Once the stock has been incorporated into the egg mixture, add back to the pot. Stir in the spaghetti squash and gently reheat the soup if necessary don’t bring to a boil or the eggs may curdle. Season with salt and pepper. Serve hot, garnished with chopped parsley if desired. Spring Summer Favourites JUICY JELLY POTS Ingredients... 1 x 11.5 g sachet sugar-free raspberry jelly/jello crystals (or equivalent to make a 600 ml/2 cup jelly) 1 scoop unflavoured clear-setting protein powder (optional) 2 handfuls of prepared fresh fruit (raspberries, strawberries, passion fruit ) 1 x 120 g pot low-sugar and fat prepared custard (optional ) mint sprigs to decorate Method 1. Pour 250 ml/1 cup boiling water into a heatproof jug, sprinkle over the jelly/jello crystals and beat to dissolved. Allow to cool slightly then add the protein powder if using (according to packet instructions) and stir or whisk well to dissolve. 2. Divide almost all of the fruit between 4 small serving glasses or pots (saving a few to decorate later if liked). Pour the jelly/jello over to cover, cool and then chill to set. 3. To serve, top each pot with a little custard, the reserved fruit and mint sprigs if liked or leave plain. 4. Store in the refrigerator for up to 2-3 days depending upon the fruit used. Green baked eggs with broccolini, leek, baby spinach and feta Ingredients... 1tsp unsalted butter 1 leek, thinly sliced Sea salt 1/2 tsp white wine vinegar, or a dash of fresh lemon juice 100g broccolini, florets left whole and the stalk sliced diagonally into 1cm pieces 65g (1 big handful) baby spinach leaves 4 eggs, you can use more if you wish, simply make additional wells in the pan 20gm Low fat feta cheese A scattering of fresh dill leaves, to serve Freshly cracked black pepper, to serve Method 1.Preheat the oven to 180C. 2.Heat the butter over medium-low heat in a wide, heavy-based pan with a lid that is oven-safe. you can use a large skillet on the stove, then pop it under the grill instead of the oven to finish the cooking process. 3.Once the butter has melted, add the leeks and a pinch of sea salt, and cook for about 7 minutes until the leeks are soft and sticky. Turn the heat up and add the broccolini and white wine vinegar or lemon, stirring for 30 seconds. Add the spinach leaves and stir again to mix it all together. 4.Turn off the heat and make four wells in the vegetable mix. Crack an egg into each well (or into a bowl first, before transferring if you're worried about egg shells), pop the lid on and cook in the oven for about 4-6 minutes until the egg white is set and the yolk is cooked to your liking. INGREDIENTS The Meat... 450g grassfed lean ground beef 1 small onion, chopped 1 clove garlic, chopped 1 large jalapeno pepper, seeded and chopped (save a little bit for garnish) 1/2 tsp salt 1/2 tsp freshly ground black pepper 1/2 tsp onion powder 1/2 tsp smoked paprika 1/2 tsp ground coriander 1 tsp dried oregano 120 ml bone broth, or water 1 medium tomato, chopped (save a little bit to garnish) The Zoodles 2 large zucchini, made into strands with a vegetable spiralizer 1/4 tsp salt 1/4 tsp freshly ground black pepper 1/4 tsp garlic powder 1/2 tsp dried oregano INSTRUCTIONS Place a well seasoned cast iron skillet over medium-high heat and add the ground beef, salt and pepper to it. Break the meat up with a wooden spoon and cook it, stirring from time to time, until it becomes brown and crispy, about 8 minutes. Add the chopped onion, garlic and jalapeno pepper and continue cooking until the veggies are slightly softened, about 1 minute. Add water and spices and continue cooking until all the water is evaporated, about 1 minute; stir in the tomato and remove to a plate. Return the skillet to the heat source and add the spiralized zucchini to the pan. Sprinkle with salt, pepper and garlic powder and stir delicately to distribute the seasoning; cook for about 30 seconds, until the zoodles are barely just softened. 06.01.2022 Balsamic Chicken and Sun-Dried Tomato Sauce Ingredients Chicken: 3-4 tbsp extra virgin olive oil... cup balsamic vinegar 2 tsp salt 1 tsp black pepper 3 boneless, skinless chicken breasts/ thighs cup red wine Sauce: 1 cup sun-dried tomatoes 1 tbsp dried basil cup white or red wine 1 large clove (or 2 small) of garlic, minced Instructions Combine olive oil, balsamic vinegar, salt, and pepper in a liquid measuring cup and whisk together. Add chicken breasts / thighs to a Ziploc bag or Tupperware. Pour in marinade and make sure each breast is covered. Place in the refrigerator for a minimum of 1 hour. Preheat your oven to 400 degrees. Add 1 tbsp of Olive oil to a large cast-iron skillet over medium heat. Add chicken breasts / thighs with red wine and cook for about 8 minutes on each side, or until chicken is completely browned (but not cooked through). Place skillet in oven and bake chicken for 10 minutes. While chicken is in the oven, add 1 tbsp oil to a small sauce pan over medium heat. Add in minced garlic, sun-dried tomatoes, basil, and wine. Stir until boiling, then move heat to a simmer. Cook for about 5-8 minutes. Place sauce mixture into a bullet or blender. Wait until it's cooled a bit then blend to make sauce puree. Remove chicken skillet from oven and place back on the stove over low heat. Pour sauce onto chicken and combine everything together. Sprinkle with one more pinch of salt (~1/8 tsp) and enjoy!
