21.01.2022 Chicken Empanada * Ingredients: for dough 2 cups flour... 1/2 cup butter or margarine 1/2 tsp baking powder 2 tsp sugar 1/4 cup cold water pinch of salt for fillings: 1/2 kl minced chicken 1 med size carrot(diced) 1 med size potato(diced) 2 tbsp green peas 2 tbsp raisins 1 med size onion garlic 1 tbsp oyster sauce soy sauce or salt to taste ground black pepper 1 tsp sugar 1 chicken cube boiled egg PROCEDURES: FOR MAKING DOUGH: Combine flour,sugar,baking powder and salt then mix it well.Cut the butter into small then add the butter,cut into the flour. Add small amount of water at a time and mix it well then knead until smooth. Roll into a ball and wrap with plastic then put into fridge. Chill at least 1 hour. FOR FILLING: In a cooking pan saute onion and garlic then add the chicken mince until slightly brown, season with soy sauce and oyster sauce then add the chicken cube,carrots and potato cook until tender. Then add the green peas and raisins,cook for few minutes. Season with sugar, pepper and salt it depends on your taste then set aside and let it cool. After 1 hour, roll the chilled dough and flatten using rolling pin and cut using circle cutter mold then add the filling and boiled egg into middle and fold. Secure the sides using fork then you can fry now or if you want to bake brush egg wash on the top of empanada and bake for 30 -45 minutes in 180 C then serve.
19.01.2022 Freshly Baked PIANONO (Filipino Swiss Roll) *Ingredients:... 6 eggs, room temperature, separated 6 tbsp sugar 6 tbsp cake flour, sifted 1/4 tsp cream of tartar caster or sugar for dusting margarine or butter for filling PROCEDURES: 1.Beat the egg whites with an electric mixer or hand mixer, add cream of tartar and mix until stiff. Slowly add sugar one tbsp at a time beating well at high speed after each addition. 2. Beat the egg yolks and add them to the egg whites at a medium speed then add the sifted flour one tablespoon at a time. 3.Pour the mixture into the prepared baking tray with parchment paper. 4.Bake for about 15 minutes but make sure you preheat the oven at 375 F or 180 C for fan forced fan before you bake. 5.Remove from the tray and let the cake cool on a cooling rack. 6.Sprinkle the top of cake with caster or superfine sugar. 7.Place a parchment paper or baking paper on top then cover with a larger tray. Flip the tray together with the cake and the cooling rack. Remove the rack. 8.Remove the parchment paper from the cake. 9.Spread the margarine or butter over the cake, sprinkle sugar over the margarine. 10.With the longest side facing you, roll up the cake away from you.Dust it with sugar and slice crosswise.You can make about 12 slices
18.01.2022 Vanilla Cream Filled Doughnuts INGREDIENTS: For dough: 1/2 cup lukewarm milk ... 1 tsp dry active yeast 2 tbsp melted butter 1 tbsp sugar 1/2 tsp salt 1 egg + 1 yolk 2 cups bread flour or all purpose flour For Vanilla Cream Filling: 2 cups milk 1/2 cup sugar 1 tbsp vanilla extract 1/4 cup cornflour 3 egg yolks 1 tbsp butter * oil for deep frying *sugar and cinnamon for coating PROCEDURES: 1. For diugh: In a mixing bowl combine the 1/2 cup lukewarm milk, 1 tsp dry active yeast then stir. Add the 2 tbsp melted butter, 1 tbsp sugar, 1/2 tsp salt, 1 egg+ 1 yolk and 2 cups flour. Mix it well until well combined. 2. Knead the flour mixture for 5-7 minutes then put in the bowl but apply some oil around the bowl and cover with cling wrap. Place the bowl in a warm place for an hour until it rise into double. 3. For vanilla cream filling: In a sauce pan, put the 1.5 cups of milk, 1 tbsp vanilla extract and 1/2 cup sugar then stir it well with medium fire. In separate bowl put the 1/4 cup cornflour, 3 egg yolks and 1/2 cup milk then mix it well until well combined. After that, add cornflour mixture to the saucepan then stir it continuously until the mixture is thicked. Remove and place into a bowl. Fridge for 1 hour 4.After an hour, remove the dough into a bowl then knead on a clean surface and dusting with flour. Roll it into thick sheet then cut using a cookie cutter or just divide it for 12 pieces then roll into circle form. Then cover it again for 30 minutes to rise the dough. 5.After 30 minutes you can now fry the dough until they golden brown then roll them well into sugar with cinnamon.Make a small hole then pipe the vanilla cream filling.

14.01.2022 Sticky Date Pudding with Butterscotch Sauce and Vanilla Ice Cream INGREDIENTS: Cake/Pudding:... 300ml Water 250 grams of Dates 1 tsp baking soda 75 grams butter 2 eggs 1 cup self raising flour 1 cup brown sugar Butterscotch sauce: 60 grams butter 1/2 cup butter 200 ml thickened cream 1 tsp vanilla PROCEDURES: 1. Preheat oven to 190 C or 350 F 2. Grease the pudding moulds or square or circle cake pan with butter or oil 3. In a medium sauce pan pour the 300 ml water and 250 grams of dates but make sure you cut into small pieces. Turn on the heat into medium to medium high and let it boil. When its boiling, turn the heat off and put the 1 teaspoon of baking soda(bicarbonate soda) then stir or mash well using potato masher or fork until it resembles into sloppy porridges. 4. Place the butter and stir until its melted. 5. Get two lightly beaten eggs then pour into mixture and beat until incorporated. 6. Add the 1 cup self raising flour( if you dont have a self raising flour you can use 1 cup plain flour but you need to put some 1 tsp baking powder also into mixture) and 1 cup of brown sugar then mix it through until well combined. 7. In a baking/cake pan or pudding moulds, pour in the pudding mixture and place into oven that already preheat into 190 C/350F in 25-30 minutes.But in 25 minutes check using a toothpick or skewers when its wet moist is not yet ready but when it comes out slightly moist or dry its ready. 8. Put into cooling rack to completely cool down. 9. For making a sauce, get a small sauce pan. Pour in the 60 grams butter, 1/2 cup butter, 1 tsp vanilla and 200 ml thickened cream. Turn the heat on into medium and stir it well until the sauce is cooked.

12.01.2022 Sweet and Sour Pork INGREDIENTS: 1 kg.pork belly(skinless,cut into sm/med pieces) 2 tbsp soy sauce... 2 garlic cloves (finely grated) 1 tsp ground black pepper 1/2 cup plain flour vegetable oil or canola oil for deep frying 1 brown or red onion (diced) 1 capsicum (bell pepper) 1 can pineapple chunks or 100 g fresh pineapple spring onions Sweet and Sour Sauce: 1 cup brown sugar 6 tbsp white vinegar 4 tbsp tomato ketchup 2 tbsp light soy sauce 2/3 cup pineapple juice 1/2 tsp chinese five spice 4 tsp corn flour(cornstarch) mixed with 4 tbsp water PROCEDURES: 1. Place pork belly in a large bowl.Add the garlic,soy sauce and pepper then mix until well combined. Set aside to marinate for at least 30 minutes. 2. For sweet and sour sauce:place the brown sugar, vinegar,tomato ketchup,soy sauce,pineapple juice and chinese five spice in a sauce pan over medium- high heat. Simmer for 5 minutes until the sugar has dissolved. Add the corn flour mixture to the sauce and simmer for 2 minutes to thicken. Remove from heat then set aside 3. To cook the pork, fill a wok with oil and place over the heat. Toss pork with flour and cook in batches for 3-4 minutes or until golden brown. Place the cook pork in a plate with paper towel to drain. 4. Heat a clean wok or any sauce pan over high heat. Add the oil and stir fry the onion for a minute then add the capsicum and stir fry for a minute. Then add the pork, pineapple and the sweet &sour sauce. Stir fry until well combined, remove from heat and toss through spring onion then serve.

Heat oil and sauté garlic and onion. Add pork,stir fry until brown. Then add the soy sauce,oyster sauce, hoisin sauce and sugar. Add the water then simmer for 30 minutes or until tender. 2.Add the diluted cornflour and stir until thick. Set aside and let it cool. 3.In a mixing bowl put the egg whites. Beat the egg whites and cream of tartar, beat until foams up.Gradually add the sugar and beat until stiff. 4. In a separate bowl, combine flour,sugar,baking powder and water then mix it well.Carefully fold-in the egg whites mixture to the flour mixture. 5. Fill molds/muffin pans/cupcake half full with puto batter. Scoop 1 tbsp of pork asado filling into the mold.Pour batter on the top just enough to cover the filling. Top with a slice/grated cheese and salted egg. 6. Arrange in a steamer and cook for 10-15 minutes.
10.01.2022 KAKANIN BUCHI/BUTSI INGREDIENTS: 200 grams mung beans(munggo) 3 cups water... 1/3 cup sugar 2 cups glutinous rice flour 1/4 cup sugar 3 cans and 3/4 cups coconut milk 1 cup condensed milk 1 cup coconut milk PROCEDURES: 1.In a pot,cook mung beans in 1/3 cup sugar and water.Boil until mung beans are cooked and water has evaporated. Set aside. 2.In another pot, combine glutinous rice flour, coconut milk (3 cans and 3/4 cups)and 1/4 cup sugar.Simmer in low heat and mix well until it thickens. Set aside. 3.Preheat oven to 350 F 4.In a small bowl combine coconut milk and condensed milk and mix well.Set aside. 5.Grease a baking pan with butter or spray cooking oil.Then spread half of the glutinous rice-coconut milk mixture.Spread half of the coconut milk-condensed milk mixture on top of the glutinous rice-coconut milk mixture then on the top of it spread the mung beans all over the baking pan.After that spread the rest of the glutinous rice-coconut milk mixture on top of the mung beans to cover them.Then, the rest of the coconut milk-condensed milk mixture on top. Bake in the oven at for 30-40 minutes or until top of the mixture becomes golden brown.

09.01.2022 BIBINGKANG MALAGKIT INGREDIENTS: 2 cups glutinous rice 2 cups water... 1 can coconut milk (400 ml) 1 cup granulated sugar Caramel Topping: 1 can coconut milk (400ml) 1 cup dark brown sugar banana leaves (optional) Procedure: 1.Rinse the rice until water runs clear. 2.Add 2 cups of water. Cook over medium heat and bring to a boil. Reduce the heat to low and cook for 10-15 minutes. 3.In a pan, add coconut milk and granulated sugar. then stir to dissolve the sugar. Bring to a simmer. 4.Add the cooked sweet rice and stir constantly until all the liquid is absorbed by the rice. Mixture will be very sticky and hard to stir.Transfer to glass cooking tray or any pan that you have with softened banana leaves or spray some cooking oil. 5. Preheat oven to 375 F or 190 C or 170 C(fan forced oven) 6. In a cooking pan, combine coconut milk and brown sugar. Stir until sugar is dissolved. Bring to a simmer and reduce the heat to low and continue cooking until mixture becomes thick and has caramelized. 7.Pour the mixture on top of the Bibingkang Malagkit evenly. 8.Bake for 30 minutes or until the top starts to bubble and turns darker in color. 9. Let to cool down in 5-10 minutes and then serve.

06.01.2022 Chocolate Crinkles * Ingredients: 1 cup flour 1/4 tsp salt ... 1 tsp baking powder 1 cup white sugar 1/2 cup cocoa powder 1/4 cup canola/vegetable oil 2 eggs 1 tsp vanilla extract powder sugar PROCEDURES: 1. In a bowl, combine the flour, salt and baking powder then mix it well. 2. In a separate bowl, combine the white sugar and cocoa powder.Mix well. Add the oil and eggs one at a time then add the vanilla, mix it well using the whisk or if you want to use electric mixer its okay. 3. Beat dry ingredients into cocoa oil mixture on low speed or using whisk until just combined. 4. Cover the dough with plastic wrap and chill for four hours or overnight. 5. Preheat the oven in 350F. Prepare a baking tray with a parchment paper and place the powdered sugar into a bowl. 6. Using a rounded teaspoon, scoop the chilled dough and roll them using your hands then drop them into powdered sugar and place into baking tray. 7. Bake at 350 F for 10-13 minutes then allow to cool in a minute or two on the sheets before you transfer to a wire rack to cool completely. 8.Store the chocolate crinkles in a container and they will keep at least a week before starting to become dry.
06.01.2022 Mamon *Ingredients: for cake batter: 3 egg yolks... 1/4 cup water 1/4 cup oil 1 tsp vanilla extract 1 cup cake flour sifted 1/2 tbsp baking powder pinch of salt 3/4 cup caster sugar for meringue: 3 egg whites 1/4 cup white sugar PROCEDURES: For meringue: Put the 3 egg whites in a bowl,whisk until its foamy or use an electric hand mixer to make it easier then gradually add the 1/4 cup sugar whisk only until stiff peaks. For cake batter: Put the 3 egg yolks in a bowl, 1/4 cup water, 1 tsp vanilla extract and 1/4 cup oil. Beat until just combined. Then add the 1 cup cake flour sifted, 1/2 tbsp baking powder, pinch of salt,3/4 cup caster sugar then mix well and set aside. Add the 1/3 meringue on cake batter,once well mixed add the remaining meringue and do not over mix the batter. Then you can put it now in the greased mamon tins or a cupcake. Bake at 325 F for 15 minutes but make sure you preheat the oven before you start baking the mamon. Let cool in a wire rack and when it completely cool down you can spread on the top butter or margarine then sprinkle with sugar and you can even add grated cheese on the top.
05.01.2022 THAI BEEF NOODLE SOUP * INGREDIENTS: 4 garlic cloves (peeled&finely chopped) 4 coriander roots (cleaned&coarsely chopped)... 1 tsp whole black peppercorns(crushed) 1 tbsp vegetable oil or canola oil 500g beef chuck steak or gravy beef 2 whole star anise 1 cinnamon stick cup soy sauce 1 tbsp dark soy sauce 1 tbsp oyster sauce 6 cups beef stock or chicken stock 200g Asian beef balls Asian green(choy sum or bok choy) rice noodles or egg noodles(cooked to serve) season with fish sauce or salt bean sprout to serve spring green onions or basil leaves to serve PROCEDURES: 1. Use a mortar and pestle to crushed the garlic,peppercorns and coriander roots to a rough paste 2. Heat oil in a saucepan then add the garlic mixture and cook for 30 seconds until fragrant. Add the beef and cooked for 3 minutes or until evenly coloured. Add the star anise, cinnamon stick, soy sauce, dark soy sauce, oyster sauce and beef stock or if you dont have a beef stock you just add water then put some 2-3 beef cubes. Cover with lid and simmer for 60minutes or until beef is tender. 3. Use a spoon to remove the cinnamon stick and star anise. Then use the slotted spoon to remove the beef in a sauce pan then transfer into chopping board so that you can chopped into bite sized then set aside. 4. Add the beef balls and the chopped choy sum to the beef broth. Simmer for 2-3 minutes to warm through. Then season with fish sauce it depends on your taste. 5. Cooked the egg noodles or rice noodles 6. Get a bowl, divide noodes among serving bowl. Put a beef balls, choy sum, braised beef over the beef broth. Top with beans sprouts and spring onion or basil leaves.
05.01.2022 CLASSIC POLVORON COOKIES AND CREAM POLVORON INGREDIENTS(Classic Polvoron) 2 cups all purpose flour... 1 cup powdered milk 1/2 cup white sugar 1/2 cup salted butter(melted) INGREDIENTS(Cookies and Cream Polvoron) 1 cup all purpose flour 3/4 cup powdered milk 1/2 cup white sugar 1/4 cup oreo cookies(crushed) 1/3 cup salted butter(melted) PROCEDURES for Polvoron: 1. Heat the frying pan then put-in the flour. Toast the flour until the color turns into light brown and make sure to stir to prevent the flour from being burnt.Once the flour is toasted, transfer into a bowl and sift well. 2. Add the powdered milk, white sugar and the melted butter then stir until all the ingredients is well combined.(same procedure for cookies and cream just add the crushed oreo cookies) 3. Using a polvoron molder, scoop the mixture and if you have a cellophane put it on the top then wrap but you can also freeze them before wrapping for 5 minutes or until firm to help them to hold the shape.
