23.01.2022 This recipe for Apple Clafoutis renders lightly caramelised apples that are then soaked in liqueur before being covered in a batter. I baked mine in the very pan that I cooked the apples in. The dessert is deliciously light and when served with cream it's almost a little fancy. The perfect foil to our wintery Melbourne lockdown! 17.01.2022 I prefer potato salad dressed with a vinaigrette. It is lighter and healthier, and is vastly superior in flavour than one made with a mayonnaise dressing. We enjoyed it recently with salmon cutlets and a Greek salad. We had dinner outside with our daughter who we had not seen in an age. The balmy evening, the scent of sweet peas and the lovely food and wine made us all feel quite heady, and optimistic for the arrival of an early Summer. 14.01.2022 Traditionalists will tell you that Spaghetti alla Carbonara relies on 5 key ingredients-Pasta, Guanciale, Egg Yolks, Pecorino Romano, and freshly ground Black Pepper. All the action takes place in the last 3 minutes when you toss the cooked pasta in the guanciale, coating the pasta with the fat before tossing it in a mixture of egg yolks and cheese.
