So, if you spend $150 a week on food, and waste food like the average Australian, that’s just shy of $2,000 you’re putting in the bin every year!! So embrace those leftovers and bits and pieces in the fridge! Leftover curry add some noodles and coconut milk and turn into a laksa. Leftover risotto fry up... into arancini balls. Leftover roast veggies turn into a frittata. Leftover rice turn into a tuna bake or rice pudding. Leftover pasta serve with a fried egg on top. Heaps of rocket, spinach or soft herbs and no idea what to do with them? Make a pesto! Thin it out with some extra olive oil, and you’ve got a pasta sauce. Milk about to go off? Turn into fresh ricotta! Raw veggies that are on their last legs my pick is putting them in a pureed soup (get my Thermomix soup guide on my website). Fruit that’s looking a lack-lustre, blend it up into a smoothie (my Thermomix smoothie guide is free on my website also!). There are so many options, you’ve just got to think a little creatively! 13.01.2022 As restrictions ease I’m challenging myself and others to not go back to what we had before, to not forget the big real issues that still need fighting for like climate change, animal rights, protecting nature, ethics, human rights, aboriginal rights, LBGTQ+ communities, gender equality and sadly so much more I think ‘the grass is always greener’ is the perfect way to summarise the anxiety that has come for me with restrictions easing in Melbourne this week. We did not have the perfect world and society before Covid and I think that’s really important to remember that. Let’s not be so quick to ‘get on the beers’ and forget about this. Im coming out of lockdown more grounded, grateful and conscious then ever before and I hope you will join me in this. More conversations about these topics please
