25.01.2022 I thought I'd be a little cheeky and add some photos of the Mexican I did for my sisters birthday. In the foreground is guacamole, first of three os hot chili dips then left is Chile con queso and last of that 3 is Frijole con queso. At the back is Pico de Gallo. She couldn't decide on a favourite and loved them all.

16.01.2022 By this time next week I should have a first date for mexican. I'm hoping to sneak one in before Christmas

12.01.2022 If I could put on a Mexican feed for Sunday lunch and Sunday night, once every three months at a licensed club venue would anyone be interested. If it was well patronised it might be once a month then every Sunday. it has a great underutilised dining room and I would be giving all the proceeds to the club including my time as the club is near and dear to my heart. Even though I have just joined the board of directors this would be an easy way for me to help and get some money back into that club. Anyone keen?

10.01.2022 Ok so the three possible dates are Sunday 10th , 17th and 24th of November. Dinner from 4.30pm to 8.30pm. I'm going to give you guys the opportunity to pick the date. It doesn't seem like there is anything on around these dates and if you think something might clash let me know. I'll leave this up to this time next week and please feel free to pick a date. If I get not many responses then we will be running it Sunday 17th of November. Hmm can't wait , this time next week I'll be cooking mexican again at my sisters. practicing , hell no just love Mexicano

09.01.2022 This night is sold out. Food is out from 5pm to 7pm and is with booking only. It is in the downstairs dining room please follow the signs. The Club will be open earlier and we will have the downstairs room open for after dinner drinks to 8pm. It is at the Italo-Australian Club, Barrow Lane, North Lismore.

02.01.2022 I was thinking about keeping the menu simple for the first one of these events and hopefully if it a success which relies on all of you lovely folk spreading the word and turning up we will have it every Sunday. Here's a basic menu but you can preorder other stuff like fish tacos etc Basic Menu( but you can ask for other stuff prior) Entrees... Dips Guacamole- Avocado dip Frijole- beans and cheese Chile con queso - chile and cheese Salsa Fresca- cooked tomato salsa Johnny Cash- much hotter tomato chile salsa Pico de Gallo- Chopped tomatos, onion, chile , coriander and lemon or lime juice. The will be a better price to buy three as a trecolore Other Entree BBQ buffalo wings Nachos Povera - cheese, sauce and beans Nacho Grande- the above with everything and you choice of meats. Cisco Kids- Crispy tortilla with melted cheese and your choice of salsa with guacamole Mains Shredded beef enchiladas w/rice, beans and sauce Prawn Burritos w/rice, beans and sauce Soft Tacos with creamy chickenw/ rice beans and guacamole Chicken Fajita's with rice, salsa, salad and guacamole Tostada's-( crisp baskets) filled with salad, guacamole and either shredded beef, prawns, chile colorado or creamy chicken Chile Colorado- chunks of beef in a hot spicy sauce. Basic kids meals. Cisco kid w/ cheese(and mild salsa fresca) Spaghetti Bolognese Ham and pineapple pizza Minute Steak with chips Desserts At the moment just icecream with topping but we'll work on that Any suggestions please ask here on in a pm.
