24.01.2022 What an amazing recent achievement this is from one of our members, Leesa Walker. A couple of weeks ago Leesa completed the Half Ironman Aqua Bike at the Kangaroo Island Sufferfest. This consisted of a 1.9km ocean swim followed by 90km on the bike. Leesa completed this monstrous effort in 4 hours and 29 minutes. After having an ankle fusion about a year ago, Leesa is now quite limited with what she is able to do. She has difficulty even walking a distance. Being the competiti...ve person Leesa is who loves a challenge, this was the perfect event to train for and she has really enjoyed having a clear focus. It would have been so easy for Leesa to say it was all too hard, she has certainly had her ups and downs with the limitations her ankle has presented. It’s such a credit to her that she has pushed through this barrier and found a challenge suitable to work towards. Leesa has been following a tailored training program for several months specifically for this event, under the guidance of Clinton, and said he has been a fantastic support. Leesa was really anxious about the ocean swim as in her two ocean swims prior, conditions were really choppy and she lost her confidence. The race day conditions also proved to be choppy however Leesa managed to stay relaxed to confidently complete the event. Leesa was thrilled with her result, and satisfied that all her persistence had paid off. Congratulations and well done Leesa!

04.01.2022 Still needing some inspiration for Christmas entertaining? Perfect as part of a buffet, an entree or transform left overs into this healthy mouth watering salad. Thai Style Smoked Trout Salad 300g smoked trout fillets... 125g bean shoots 1/2 cup each of mint and coriander leaves (coriander haters just leave out) 1/3 cup toasted slivered almonds 1/2 small red onion, thinly sliced 2 cups Wombok (Chinese cabbage) Thai-style dressing 1/4 cup lime juice 1 1/2 tbsp tamari 1 tbsp sesame oil 1 small red chilli, finely chopped Break the smoked trout fillets into large chunks and place in a bowl with the remaining ingredients. Combine all the dressing ingredients in a small bowl, mix together and pour over salad. Toss gently to combine and serve. Looks fantastic either served individually or arranged on a large platter.
