24.01.2022 Looking for some tips on how to prep your prawns this Christmas Season? Well look no further! Here at Enzo’s we LOVE our seafood and pride ourselves on serving delicious well-cooked meals! Scroll down for some of our top tips on how to prep your prawns!!... First! Fresh is best! The fresher you can get your seafood the tastier they will be. Secondly, you MUST remove the intestinal tract. This is the black line running down the inside of the prawn. Leaving this in will make your prawns gritty. There are many different ways to cook your prawns... let’s run through them! Shell On. These are best BBQ’ed, lightly covered in oil. To prep - wash in cold running water. You can remove their heads and using a sharp knife or kitchen scissors cut along the spine and remove the intestinal tract. Shell Off. These can be cooked in many ways. If deep frying, toss in cornflour and lightly fry. To prep- wash in cold water and remove heads and shells. Using a sharp knife remove the intestinal tract. Back Split These again can be cooked in many ways. To prep- wash prawns and remove heads. Use a sharp knife to cut down the back of each prawn being mindful to not cut the whole way through. Remove the intestinal tract and press down on each prawn using the heel of your hand to open them up. We hope these help you better prep your prawns ready for your own amazing recipe! 14.01.2022 Heres another update for our lovely customers From today onwards, we will be allowed to increase our total capacity to 50 people at any one time. Due to social distancing requirements, the pizzeria may hold up to 22 people, whilst the restaurant can cater for the remaining balance.... Also, we are limited to tables of 10 people and below only. Seating times are more flexible than before with larger tables of 6 and above able to stay for 2 1/2 hours, whilst smaller tables will have 1 1/2 - 2 hours to dine. 12.01.2022 Planning on cooking the perfect steak for Valentine’s Day? Our chefs are happy to share their secrets for cooking the BEST steak!! Start with top quality meat. ... Here at Enzo’s we love using eye fillet. But if that’s not your favourite cut that’s ok. Just pick a good quality cut of meat. Season that steak! Rub it in some good quality olive oil and some flakey salt or sea salt. This will add flavour and help draw out some meat juices to reabsorb during grilling and add to the flavour of your meat. The biggest mistake most people make is not adding enough salt! Don’t be afraid to add fresh herbs as well. Again using super fresh ingredients is key but try adding some rosemary next time when seasoning to add a bit more depth of flavour. Don’t play with your food! When cooking we want to cook one side without moving before turning to cook the other before a final turn back onto the original side. Constantly playing with your steak and flipping it back and forth and moving it around the pan will not give you a delicious soft juicy steak. As cuts and personal preferences vary greatly in relation to cook times, speak to your butcher when you purchase your meat for their recommendations. And finally, take your steak to the next level with a good quality sauce. We love a good mushroom or pepper sauce with our steaks but choose what makes you happiest!
