24.01.2022 This week we brought our young senebrah heifers to the yards, weaned the calves and assessed them for favourable traits including, fertility, tenderness and temperament. Just look how cute the babies are!

What better way is there to get a delicious hand selected rump in your oven and fill the freezer at the same time? Maybe a perfect Christmas present to split with the family? ... Did you know? The Rump is a boneless five-muscled primal that sits between the Porterhouse and Silverside, with there being two pieces of rump beef per carcass. Rump is a very full-flavoured piece of meat that is excellent and versatile. Rump roast and rump steak is renowned for its flavour, but it may be on the tough side if not cooked properly. Rump steak tastes the nicest when it’s grilled or barbequed, whereas a rump roast of meat is best suited to braising or oven roasting.

21.01.2022 We have been busy preparing two of our paddocks for a major revamp. Fencing is going up this week by TDM Fencing and looks amazing! Fingers crossed for some rain soon so we can zero-till the seed.

20.01.2022 What a crazy year it has been! We took a moment last month to look back on how far Eva Valley Meats has come... From Pete and Fiona on there own, butchering and delivering only a few kilo's of beef in iced packed eskies to friend's and family in town, we are now a full-time team of 7, delivering thousands of kilo's of beef to a group of loyal stores, restaurants and locals all over the Top End. We are thankful for all of the support we received especially with the effects of COVID-19. We can proudly say that through all the craziness this year we stood strong to our morals, truly have the best customers that embrace our ways and managed to come out on top!
20.01.2022 A few weeks ago Justin from Smokey J's Brew & Que showed Freds Pass Rural Community Show Inc. how to prepare and cook one of our briskets for their Mini Series. The Mini Series is supported by NTG Major Events and the Litchfield Council, showcasing many of the Top Ends amazing local produce, people and places. This was the last recording for the series . So now all the filming is off to PRLX for them work their magic with editing. Look out for the launch of the six episodes soon!

This (approx) 40 kg worth of mouth-watering grass-fed beef will be broken down by our butcher and packaged to the winner's custom preferences for delivery 2 weeks from now. So how do you bid? 12.01.2022 Do you recognise this grass? It’s prolific this time of year, growing madly on road verges, created a wall of green, with those heads of spear-like seeds (that are perfectly aligned with your head when you are on a quad bike and always manage to spear your face and get into your clothing!). Do you know the old Territory saying about spear grass? They say when the seed heads turn black, that’s when the barra are biting.this is because the grass germination cycle is in-sync wi...th our rain, and lots of rain creates big run-offs in our rivers and estuaries, making perfect conditions for barramundi fishing. The last rain of the season is also known locally as the ‘knock-em-downs’, this is referring to the rain and wind knocking over the spear grass heads and spreading them around in the storm. That is why the spear grass appears to just vanish, along with our wet season. It may not appear so, but spear grass has declined over large areas since the 1970’s, due to our Eucalyptus woodlands being cleared for grazing. There is an increasing awareness of the need for sustainable management of native and natural pastures. Meeting this need will require the maintenance of the perennial grasses of northern Australian savannas and an ecological knowledge that can predict change in a variety of circumstances and locations.
