17.01.2022 IF LOCAL PRODUCE HAD FEATURE FILMS It's big & it's delicious... coming soon to an oven near you! Jurassic Pork starring Dr Goodness Free Range Pork! How to get the BEST crackling with minimal effort;... 1 When you are ready to roast the pork, pat dry with a paper towel then score the skin. 2 Add a little olive oil and a generous sprinkle of salt, rub in well then roast as normal. 3 Right at the end of cooking, switch on the overhead grill - this will make the crackling puff up, becoming impossibly fluffy yet crunchy! Enjoy! How do you make cracking super crunchy?

10.01.2022 SWEET AS Pick of the day from @albanyfarmersmarket is this sweet little package from @wa_bush_honey I love bees and always excited when the paper bark tree is in flower & the tree is humming with bees! What makes me even more excited for this lovely honey is that it is collected within 5kms of where I live! Talk about local food or what!

07.01.2022 IF LOCAL PRODUCE HAD FEATURE FILMS So... these kinds of thoughts are in my mind all the time... yes, my mind is a little silly but I love it! How about Porongurup Pure feta in a tasty Greek style salad! GREEK SALAD... Serves 2-4 4 ripe tomatoes, chopped 1 continental cucumber, chopped 1/2 red onion, cut into thin slices 1 red capsicum, deseeded & chopped 100g Olives - kalamata work nicely 150g Porongurup Pure Jersey or Sheep Feta, cut into 3tcm cubes Assortment of lettuce and basil leaves 1/2 cup olive oil 50ml white wine vinegar Pinch salt & pepper Squeeze of lemon juice if you'd like! Combine all chopped vegetables, feta and assorted leaves in a serving dish. Place oil, vinegar, salt/pepper and lemon juice in a jar with a tight fitting lid. Fit lid and shake well to emulsify dressing. Pour dressing over salad, toss to coat well and serve! Easy as!

05.01.2022 BEST WEEKEND EVER! So we did a thing over the weekend... our first 2 day Cheese Making Workshop- Cheese the Day! I had two glorious days of making cheese with the most fabulous people... could it get any better?!... We made 7 types of cheese using Yard 86 milk , ate some delicious food made by The Muffin Queen Albany and had a little visitor or two at the Albany Business Centre kitchen! 03.01.2022 BUSINESS NETWORKING I attended my first Albany Chamber of Commerce & Industry business after hours last night! It was so lovely to meet so many of our local business owners and have the chance to enjoy each other's company. I have only joined the ACCI in the last month but I have already gained so much from being a member!... I have attended several workshops that benefit growing my business, have met many local business owners that I wouldn't normally have the chance to meet and have the support of the wonderful team at @albany_cci - it is such a bustling hive of activity and wonderful community to be a part of! 01.01.2022 RAINY DAY BAKING Roald Dahl's Revolting Recipes was my favourite recipe book as a child! I would borrow it from the library back-to-back so many times that the Librarian asked me politely to allow other students to have a turn I mentioned it to my Pre Primary child and how I used to make "A Plate of Soil with Engine Oil" and "Fresh Mudburgers"... Last week she had asked the school Librarian if they had a copy and she came home with it!... It is so nice to share this with my children! On today's list - "Bruce Bogtrotter's Cake" from Matilda - my favourite Roald Dahl book!
