25.01.2022 , One of last weeks delicious clients meals and one of my favourites coming into warmer weather. I sprinkle toasted nuts & seeds on this for a bit of texture & crunch!... I sometimes... - add quinoa, whole grain couscous or buckwheat + maybe add some rocket, goats cheese to make roast veggie bowl - baked some chicken or salmon for the last 15 minutes of cooking - mix in some pre-made, homemade pesto or chimmichuri + @ which I pop in the oven for the last 15 minutes of cooking. This is hands down one of the quickest healthy meals I eat. - as long as you have 30-45 min for the veggies to cook! Juicy rib eye with chimmichurri roasted sweet potato hasslebacks & roasted veg was on the menu for client meals last week ...
