22.01.2022 ~~ FISH JERKY ~~ Fresh fish rapidly deteriorates unless some way can be found to preserve it. Dehydrating, (Drying) is a method of food preservation that works by removing water from the food, which inhibits the growth of microorganisms. Voilà!! ... enter the fabulous Excalibur Dehydrator! Almost any and all fish can be dehydrated and turned into jerky.... Drying fish is a way of preserving it at a time of plenty, to be used when there are less fish being caught. Throughout Asia dried fish are a delicacy, highly sought after. Being partial to the Asian styles of food preparation, we offer a recipe for Fish Jerky steeped in the flavours of ginger, soy, and pineapple. 1. Cut the fish into 0.65Cm (1/4-inch)-thick strips, 2.5cm (1 inch) wide and 7.5cm to 15.25cm (3 to 6 inches) long. Combine the remaining ingredients in a covered container and marinate the fish in the refrigerator, for at least six hours, or preferably overnight. Discard the marinade and dry the fish strips well, dabbing them with paper towels to sponge off any excess marinade. 2. Put an Akela silicone sheet on the bottom of the dehydrator to collect any drippings. Spread the fish over the trays and dehydrate at the highest setting 62 - 68C (145 155 F). 3. After two hours, reduce the heat to 154C (30F). The drying time will vary considerably. When done, the fish jerky will be dry but not brittle, so that the pieces crack but don't break when bent, with a dark brown glaze. Allow the jerky to cool and keep it refrigerated, in a sealed container, until you're ready to eat it. For making jerky, use low-fat fish, such as halibut, and avoid oily species like bluefish. 1kg (2 lb) fish fillets (saltwater species like tuna and snapper work really well, as do firm-fleshed, low-fat freshwater fish like bass, and trout) Marinade: 1/2 cup soy sauce 1/4 pineapple juice 1 tbsp brown sugar 1/4 tsp. cayenne pepper 1 crushed garlic clove 1 tbsp. fresh ginger, minced 1 tsp. salt 1 tsp. pepper Enjoy!! #excaliburdehydratorsaustralia #excaliburdehydrators #excaliburdehydrator #Excalibur #dehydrator #sustainableliving #driedfoods #healthylifestyle #driedsnacks #backpacking #preparedness #homesteading #diyfood #preservation #foodpreservation #fishjerky #driedfish #jerky

Kale, or leaf cabbage, belongs to a group of cabbage (Brassica oleracea) cultivars grown for their edible leaves In its uncultivated form, it is called wild cabbage, and is native to coastal southern and western Europe. Its botanical name, oleracea ,means "vegetable/herbal" in Latin Researchers believe it has been cultivated for several thousand years A diet rich in cruciferous vegetables (e.g., kale, cabbage, broccoli, cauliflower) is linked to a reduced risk of several human cancers. How to Remove stem from the leaves and tear the leaves into bite size pieces. Put the leaves in a large bowl and discard the stem. Keep The Leaves Large: They'll shrink once they're dehydrated. There are loads of marinades and toppings you can use we’ll offer you some suggestions in future posts. Place all marinade/topping ingredients into a blender, processing until smooth. Add a little water or oil as needed, for an easier blend. Hand-mix the ingredients, massaging gently. Transfer to Excalibur dehydrator tray in a single layer. Do you get this forlorn look when you doggie gets hungry for munchies?? :D This is a very simple dog chew/treat that will satisfy even the most demanding pug, such as Toshi here!! He got all dressed for dinner, and gets rather goggle eyed with the intensity of having to wait for his delicious treats :P ============= SWEET POTATO DOG TREATS Your doggie will love this one and it is easy to make. Thoroughly wash and peel sweet potatoes. Slice the sweet potato into 0.65cm (1/4) slices- you can also cut down the middle lengthwise and slice into 0.65 cm (1/4) strips. Dehydrate at the highest setting 62 - 68C (145 155 F) until done. Drying approximately 6-8 hours will leave them with a chewy texture. For crunchier treats dehydrate longer until the desired consistency.
