Try this easy Cream Puff Recipe. 1/2 cup water 1oz (30gms) butter 1/2 cup Self Raising flour 2 eggs... * Preheat oven at 250 degrees / reduce to 210 and bake puffs for 20 mins. Open oven and gently scatter puffs to alleviate sticking to grease-proof paper. Close door and allow to cool in oven (this drys the inside). Great to freeze and use on demand. See more

13.01.2022 Another easy delicious ECB recipe for those travelling! BRUSCHETTA SQUARES: Tomato Salsa: Combine 2 tomatoes (diced finely and preferably Romas), 1/2 red onion (diced finely), 1tbls fresh herbs (parsley, thyme, basil), 1 clove garlic (diced or crushed), 1tbls olive oil, season to taste and allow to stand for 20mins. This is even better prepared the day before. Brush 2 sheets of puff pastry with a little olive oil and cut into 6cm squares. Place a heaped tsp of salsa in the m...iddle of a square. Cook hot oven for 12/15 mins or until lightly brown on edges. May be frozen and or microwaved. Enjoy and Happy Travelling from the ECB Team. 11.01.2022 RECIPE: CHRISTMAS GINGERBREAD (Thanks to Robyn Bushell) 4 cups plain flour 1/2 cup SR flour... (1 1/3 cups brown sugar, 1/2 cup golden syrup, 180gms butter, 1 tblsp ginger, tsp mixed spice) dissolve together. Cool and add 2 egg whites then sifted flours. Knead and divide into 3, place in cling-wrap and refrigerate 30mins. Roll out and cut into desired shapes, cook 10 mins @150 degrees. Icing: gradually stir sifted pure icing sugar (up to 3 cups) into an egg white, blend until white and glossy with a stiff consistency. Cut a corner off a plastic snap lock bag and place 2 tablespoons at a time in bag and decorate cookies to suit. See more

08.01.2022 DELICIOUS BANANA BREAD (Thanks to Maree Filder for this recipe) Ingredients: 3/4cup vegetable oil 2eggs... 1 cup thick yoghurt 1/2 cup castor sugar 2 ripe bananas (mashed) 2 cups self-raising flour 1/2 tsp spice (I use ground cinnamon) OPTION: Substitute 1/4 cup sugar for 1 extra banana Method: *Preheat oven to 180c and line a loaf pan with baking paper *Combine oil, eggs, yoghurt, sugar and bananas in a bowl *Add sifted flour and spice, stir until smooth * Pour into prepared pan an cook for 35/40 mins (golden brown) *Allow to cool in pan *May be served cool, warmed or toasted Enjoy and Happy Travelling from The ECB Team

07.01.2022 This RECIPE is so easy to prepare and delicious anytime, snacks or meals .. MINI PIZZAS (Recipe: Thanks to Wendy McCrone) 3 sheets of puff pastry (thawed) 1 egg, 250g grated cheese, 1/2 onion (finely chopped), 125gms of ham (diced) or salmon, 1 tbs parsley, 1 tbs cream, 1/2 tsp mustard, season to taste Combine together in a bowl and place mixture in patty pans lined with the puff pastry. Makes 36. Cook hot oven 15min.... May freeze or microwave to reheat. Happy Travelling from the ECB Team! See more

07.01.2022 Made this caramel tart whilst visiting Darwin for a dinner date with friends. Van oven works a treat! Very popular. Tart Pastry: 2oz butter 1 small egg 1/4 cup of sugar (raw or white)... 5 (heaped) tablespoons of SR Flour Method: Cream butter and sugar, add egg then flour. Mix well. Grease 2 x 20cm pie plates and line with pastry, bake mod 7/8 mins or until edges are golden. Caramel Filling: Simmer a can of Condensed Milk for 3 1/2 hours (monitor water level). Place in a bowl, add 1 tsp of vanilla and beat until smooth. Fill pie crusts with caramel and top with Chantilly cream, garnish with strawberries, chocolate or the like. Happy Travelling See more

02.01.2022 Beef/Lamb Shank Soup My Son called and asked me for this recipe, I actually had to make the soup to write it, has always been kept in my mind. 2 lamb shanks or a pkt beef soup bones 1/2 cup soup mix (I use Mackenzies)... 3 tablespoons of pearl barley (I use Mackenzies) 2 large carrots 1 onion 2 celery stalks small swede small parsnip 1/2 red apple spinach (1 small leaf) 1 wedge of kent pumpkin Method: Soak soup mix and pearl barley in a pot 1/3 filled with water for 30mins. Add meat and cook on mod whilst you dice veges and chop pumpkin, add to pot and simmer 3 to 4 hrs stirring periodically and mashing the pumpkin in. Season to taste. Serve with crusty bread rolls.
