Contaminated food th...at causes food poisoning doesn’t always look or smell any different to usual. It’s important to store and reheat your leftovers correctly to avoid getting sick. Cover and place leftovers in the fridge immediately after cooking to cool to below 5 degrees Celsius. Leftovers can also be cooled to room temperature as long as it is put into the fridge within 2 hours after cooking. To increase the rate of cooling, a large amount of leftovers can be divided into smaller portions in shallow dishes. Leftovers should be eaten as soon as possible but if not they can be kept refrigerated for up to four days. Cooked leftover foods that cannot be used within four days should be frozen for longer and safe storage. If you’re reheating leftovers, make sure you reheat until steaming hot (75 degrees Celsius) and stir periodically to remove cold spots where harmful bacteria can grow.
