Coach Sam has got your covered with the most nutritious and delicious recipe You don't need to over-complicated your cooking to get enough variety and nutrients from your food Sometimes you just need a quick and easy way to smash out a high volume of quality meats and carbohydrates for the week whilst still having variation between meals. Prepare yourselves for some seriously tasty (and healthy) beef mince with stir fry vegetables and rice ...AND butter chicken with sweet potato mash and brown rice Estimated cooking time = 2 hours This prep will feed you for 16 meals KEY INGREDIENTS - 4 cups uncooked white rice - 2.5 cups uncooked brown rice - 1.6kg sweet potato - 1kg Beef mince (extra lean) - 1kg Chicken breast mince - 2kg Stir Fry Vegetables - Butter chicken Cooking sauce (500g jar) - Pasta Sauce (500g Jar) Method: 1. Cook white rice and divide evenly between 8 containers 2. Cook brown rice and divide evenly between 4 containers 3. Peel, boil and mash sweet potato (add milk if desired) and divide evenly between 4 containers 4. Cook 500g of beef mince, then add 500g of stir fry vegetables and cook together. Add HALF of pasta sauce jar, leave the other half for the other 500g of beef. Let simmer on low heat for 15 mins. 5. Add 1.5 cups of white rice to container and approx 1/4 of the 500g of beef- vegetable mix 6. Repeat step 5 to make 4 containers of rice and beef per 500g of meat 7. Repeat steps 4 to 6 but with chicken mince and butter chicken cooking sauce and instead of white rice, evenly divide the sweet potato mash (400g per container) and brown rice (approx 1 cup per container) between 8 containers.
