24.01.2022 I baked the bread in a very slow oven 130 C for 2 hours, probably a little two long. 15 min less would have been better, however it turned out pretty good even though it didnt rise as much as I would like it. The texture was reasonably soft and spongy with a very sour taste which I liked initailly but it was a bit much when the bread had cooled down. I needed to ferment it less. I will work on that.



24.01.2022 Gluten free sprouted buckwheat and dairy kefir bread in the making.The buckwheat was sprouted for 36 hours, rinsed well placed in a blender and blended with kefir,salt and fennel seeds. I greased the loaf tin well and poured the mixture into the tin. It will sit on the bench for 24 to 36 hours until it has almost doubled in size.

23.01.2022 Raw Honey Mead I like to drink it while it is young with a low alcohol content. Very refreshing with ice lemon juice and mint

20.01.2022 The photo below is the baked Sordough Sprouted Buckwheat Loaf, sorry its a bit blured. This was my first attempt the wheather was a bit cool so it didnt rise as much as I expected it to. Overall I was pleased with my first attempt

11.01.2022 Beet kvass is a fermented beverage. It is great for digestion, is packed with nutrients, cleanses the liver and alkalizes the blood. Beet kvass may be used in place of vinegar in salad dressing and added to soups and casseroles. Lacto-fermented beet juice is particularly good for people with cancer as the beets have a regenerative effect on the bodys cellular function.... A successful fermentation will have a sweet pleasing tangy sour taste and can be slightly bubbly. Some brews are more flavorsome and intense than others. It is beneficial to drink a 1/4 of a cup in the morning and evening as a blood tonic and for its medicinal qualities. The Bloom on Beet kvass I made a batch of beetkvass. I added 2 tablespoons of whey from Paris Creek plain organic yogurt. I let it sitt on the bench for 2 days in warm weather to activate the fermentation process. This is the bloom that developed on top. If I had not of known better I would have thought that it had turned bad. From my years of fermenting food and making beetkavass I knew that this was okay even desirable. I marveled at this act of natures natural creation and scooped the bloom from the top of the now activated fermented beverage. I tasted the deep mulberry couloured liquid and to my delight it was one of the best batches that I had made. The flavour was full bodied, rich and tangy.,,,,, Rosanna

09.01.2022 The sprouted Buckwheat and Keifir Sourdough bread has been sitting on the bench for 48 hours now and has increased in volume by a third. I would like it to rise a little more before backing so I heated the oven to 100 cel and turned it off then placed the bread into it. hopefully it will be ready to bake soon. The temperature has been 20 to 25 deg during the day and around 17deg of a night a little cool for a successful rise. I find 25 to 27deg works best for me. any how stand by for the next report. 05.01.2022 I needed some whey to make some Carrot and Ginger, so I quicky scooped out 1 cup of organic plain Paris Creek Yougurt and hung it in a small piece of muslin. The whey dripped while i prepared the carrots and ginger. This is the result some fresh whey and a little mini cheese ball.
