23.01.2022 Carrots are one of my favourite crops to grow, even more so now that I’ve got a little garden gnome who likes to help pull them out and munch on them straight out of the ground. I read a study recently that demonstrated that children who regularly play outdoors in an environment filled with plant life and soil have increased diversity of microbes within their gut and on their skin. The notion that an environment rich in living organisms is linked to a well-functioning immune system and overall health is something I wholeheartedly believe in and is just another wonderful excuse to get outside and get our hands dirty

22.01.2022 I’m pretty stoked about the fact that Nick has taken it upon himself to spend his free time (when not in the ocean) learning how to raise happy and healthy pigs on pasture @blueberryfieldsbyronbay as well as gaining butchery skills for over a year now from his generous mentors @haytershillfarm. This bacon was cured using a simple salt and sugar mix and has been hanging from the roof of our kitchen for a couple of weeks now. It was cold smoked no less than 3 times (unintenti...onally as he navigates issues with our smoker, but of course it adds to the food wank of this post). Having the ability to now consume our own meat is a huge privilege and another way to reduce our reliance on this society’s disconnected food system. But this is not what this post is about, it’s more of a thank you for reigniting my passions and continuing to inspire me. 22.01.2022 I haven’t posted anything here since last year and it’s been such lovely break. Although I’ve continued to fill my phone with photos of the garden, of all of the flowers that are blooming, the produce we’ve gathered, the meals that we’ve shared and the time spent with friends, I haven’t really felt compelled to share anything, until now... because look at her! Meet Bonnie This dear little thing was rescued from a fire. Her burnt ears have healed, her singed whiskers are starting to grow back and the top of her tail that was amputated is on the mend. She’s just the most delightful little addition to our family (and hopefully the garden - our resident pythons just aren’t keeping the rats away) #allmyfriendsarehavingbabies #imfinallyadultenoughtohaveapet #kitten #bonita #bonnie

You’ve filled our fridge with nourishing meals, baked the most delicious lactation cookies and bought me ice cream. You’ve gifted me herbal teas and the prettiest pyjamas to lounge around in. You’ve weeded my unruly garden and we’ve had FaceTime dates from afar. You’ve kept me company and cuddled Finn. Yo...u’ve left books and magazines to keep me entertained and beautified our home with flowers. You’ve done my dishes, shopped at the farmers markets, picked up toilet paper and cat food and even shaved my legs for me. 18.01.2022 Wishing everyone a very belated happy new year I had a bit of an unplanned digital detox over the holiday period due to phone issues and it was the break that I didn’t know I needed. It was time spent with the family, getting on top of uni, doing some life planning and finally embarking on a little project that I’ve been working on (more to come in the next few weeks). 2021 is already shaping up to be a big year. I’m officially in my final year of uni and completing my degr...ee is actually in sight now. It’s also the year that we are meant to be moving to Ireland and finally building a life on a farm of our own. But with the pandemic still raging in Europe and barely at all here, the grass is definitely not greener right now (figuratively speaking). Although our plans remain a little delayed, we’re making the most of our time here to continue researching and planning and saving. But really I’m making the most of the warm weather (sans the humidity and mosquitoes) and the beach and the mangoes and the bare feet and the endless amounts of tomatoes in the garden and the bananas growing at our front door. And of course, our family and friends. Anyway, I was reminded of a Wendell Berry quote recently and it seems pretty appropriate heading into the new year, so I thought I’d share it here too Always in the big woods when you leave familiar ground and step off along into a new place there will be, along with the feelings of curiosity and excitement, a little nagging of dread. It is the ancient fear of the Unknown, and it is your first bond with the wilderness you are going into.

11.01.2022 Roasting rhubarb is definitely my favourite way to cook it. It holds its shape yet goes all gooey and caramelised at the same time. We had some on our porridge this morning with blueberries and coconut yoghurt and it was delicious. Hopefully I’ll be able to score a few more bunches at the markets, otherwise this is it until next year #rhubarb #seasonaleating

11.01.2022 It’s that time of the year again I’ve been reading old cookbooks that belonged to my nan. They’re tattered and falling apart, are dog eared all the way through and have cut outs of old recipes stapled to various pages. I had all intentions of making old school bread and butter pickles but was delighted to find that the pickled cucumber recipe was for fermented ones. So I followed the recipe (with the addition of fresh dill seeds) and I’ll see how they taste in a few days.... I’ll make bread and butter pickles with the remaining 1000 cucumbers. Can anyone recommend a good pickle recipe? 5% salt brine Sliced cucumbers Grape leaves Chilli

09.01.2022 Although the garden has been neglected lately, the bounty of summer continues. Self seeded tomatoes, pumpkin and rocket. Eggplants, carrots, zucchini’s, basil, parsley and all the woody herbs. These were added to cannellini beans that had been soaked overnight and then slowly braised with lots of garlic, olive oil and lemon zest. Nothing beats the flavour and nourishment of homegrown produce #eattherainbow #homegrown #organic #nutrition
