22.01.2022 Soon to be chilli sauce. This is how I do a lot of my lactofermentation... a bunch of chillis, carrots, onion and garlic in a 2% salt solution. It takes about a week or two for the fermentation to finish.

17.01.2022 A couple of nights a week, we have a little campfire to burn some of the fallen branches near the house (yes, we do have a permit!), while we read, listen to podcasts or chat with family. Last night was the first time we did this when the calves were in this particular paddock. By the time it was dark, all six of the calves were ringed around the fire, and like us, just staring in to the flames.

13.01.2022 Latest chilli sauce. Charred mixed chillis with red onion and garlic roasted with olive oil, salt and pepper. Pureed with apple cider vinegar and brown sugar. ...I call this one "Hillsong" because it makes you want to wave your hands in the air and sing, sorry, singe. Dominant sweet/hot taste with undertones of sledgehammer to the toe.
