21.01.2022 Friday Recipe: RASPBERRY ALMOND SHORTBREAD THUMBPRINTS Here are buttery base thumbprints filled with raspberry preserves and drizzled with an almond glaze. INGREDIENTS... 1 cup of butter, softened 2/3 cup sugar 1/2 teaspoon almond extract 2 cups all-purpose flour 1/2 cup raspberry jam GLAZE 1 cup powdered sugar 2 to 3 teaspoons water 1 1/2 teaspoons almond extract *Substitute 1/2 cup of your favorite flavor jam. METHOD STEP 1 Combine butter, sugar and 1/2 teaspoon almond extract in bowl. Beat at medium speed, scraping bowl often, until creamy. Add flour; beat at low speed, scraping bowl often, until well mixed. Cover; refrigerate at least 1 hour or until firm. STEP 2 Heat oven to 350F. STEP 3 Shape dough into 1-inch balls. Place 2 inches apart onto ungreased cookie sheets. Make indentation in center of each cookie with thumb (edges may crack slightly). Fill each indentation with about 1/4 teaspoon jam. STEP 4 Bake 14-18 minutes or until edges are lightly browned. Let stand 1 minute on cookie sheets; remove to cooling rack. Cool completely. STEP 5 Combine all glaze ingredients in bowl with whisk until smooth. Drizzle over cookies

14.01.2022 Friday Recipe: BAKED FALAFEL SALAD WITH TAHINI SAUCE For the FALAFELS -150 g / 3/4 C dried chickpeas... -A bunch of fresh parsley, chopped -1 small onion, chopped -3 cloves garlic, minced - t ground cumin - t salt -1 T flour (optional) For the TAHINI YOGURT DRESSING 20 g (1 T) tahini paste 80 g / 1/4 C Greek yogurt Juice of half a lemon t salt 1 T water (optional) 1 t honey To assemble Mixed greens 2 tomatoes, chopped 1 cucumber, chopped Vegetable oil, for frying (I used sunflower) METHOD -Place the chickpeas into a large bowl filled with water. The chickpeas will double in size so there should be enough water for them to absorb it. Let chickpeas soak overnight. -To make the dressing, place all the ingredients in a blender and blend until smooth. You can prepare this in advance and keep in the fridge for the next day. -The next day, remove chickpeas from the water and dry well. -Place oil into a large pot. Set over high heat. -Place the soaked chickpeas into the food processor together with parsley, onion, garlic, cumin and salt, and pulse until the texture resembles coarse breadcrumbs. You should be able to form balls. If the dough doesn't stick together, pulse again, or add a tablespoon of flour. Form little balls 4 cm / 1.5 inch (you should get around 16). Once the oil reaches 180 C / 350 F, add a few falafels and fry until golden brown on both sides. If you don't have a food thermometer, you can test the heat by gently placing just one falafel into the hot oil. If small bubbles appear around the falafel and it stays on the surface, the temperature is right. The frying time varies, but it should take around 4-6 minutes. If they brown too quickly, slightly reduce the heat.Place oil into a large pot. Set over high heat. -Once the falafels are cooked, place them on paper towels to get rid of the excess oil. To assemble, Place mixed greens, chopped tomatoes and cucumber into salad bowls. Top with falafels and drizzle with the tahini dressing. Serve immediately

10.01.2022 Recipe of the Day: CARROT CAKE BREAKFAST MUFFINS INGREDIENTS Cup Forage Porridge Cup Coconut Flour... 1 Tsp Baking Soda Tsp Baking Powder 1 Tsp Cinnamon Tsp Salt Tsp Ground Cloves Tsp Nutmeg 2 Eggs Cup Honey 1 Tsp Vanilla Cup Coconut Milk 2 Tbs Coconut Oil (Melted) 1 Mashed Banana 1 Cups Shredded Carrots (About 5 Large) METHOD -Preheat the oven to 350 C -Line a 12 Pan Muffin Tray with Cupcake Thins or grease thoroughly with Coconut Oil. -Grate your carrots; 1 cups of carrot should usually use about 5 large carrots. -Pop these grated carrots into a small bowl and set them aside for now. Bowl Number 1 -In a clean bowl combine the Forage Porridge, Coconut Flour, Baking Soda, Baking Powder, Cinnamon, Salt, Cloves, And Nutmeg with a fork. Now set this mix aside as well dont worry we wont forget about them! Bowl Number 2 -In another fresh bowl, mix the Eggs, Honey, Vanilla, And Coconut Milk with an electric mixer until well combined. Add the melted Coconut Oil to the bowl and mix again until well blended. -Then add the Mashed Banana to the bowl and mix AGAIN with the electric mixer until well blended. -Next, combine the two bowls together and blend thats right AGAIN until well mixed! -Finally fold in the Shredded Carrots until evenly dispersed through the dough mixture and spoon equal cupcake size portions into the tray, keeping in mind that the batter will rise! -Bake these for 30 minutes and be sure to switch the direction of the tray around half way through the cooking time to ensure a perfect golden toast to all of your muffins!

10.01.2022 HONEY-GINGER BEET EGG ROLL SALAD W/ CHICKEN & CHILI SESAME DRESSING INGREDIENTS Dressing... 1-inch piece fresh ginger, finely grated 1 small garlic clove, minced 1 tbsp apple cider vinegar 1 tbsp lime juice 2 tbsp coconut aminos 3 tbsp avocado oil, or neutral oil 2 tsp toasted sesame oil 1 tsp fish sauce tsp sea salt 2 tsp chili pepper flakes best with: honey and ginger beets Bowl head butter lettuce 3 large carrots, shaved into ribbons (with vegetable peeler) /3 head red cabbage, thinly sliced 1/3 head green cabbage, thinly sliced 1 (6.5oz) package Honey-Ginger Love Beets, diced 1 cup cilantro leaves Sliced roasted chicken 1 tbsp sesame seeds METHOD: Make the dressing: Mix all ingredients together in a bowl and set aside. Make the bowl: Line salad bowls with butter lettuce and set aside. Place the carrot ribbons, shaved red and green cabbage, diced beets, and cilantro in a mixing bowl. Pour over half the dressing and toss to coat. Shingle the sliced chicken in the bowls and place the dressed salad alongside. Spoon over more of the dressing onto the chicken and sprinkle salad with sesame seeds. **Serve right away. Keeps well in the fridge for up to 3 days.

09.01.2022 Homely, comforting cannellini beans in a SAUSAGE AND BACON RUSTIC HOTPOT served with melting cheese toasts Ingredients 2 tbsp olive oil 2 pork sausages... 150g small button mushrooms 2 rashers smoked back bacon, roughly chopped 1 smoked garlic clove, roughly chopped 1 large leek, sliced 4 tomatoes, peeled and chopped 4 tsp tomato purée 1 pint beef stock 1 x 400g cannellini beans, drained x 400g can kidney beans, drained 1 small head broccoli, cut into florets 1 small baguette, thinly sliced 40g medium strength cheddar handful parsley, chopped, to garnish METHOD 1. Heat one tablespoon of olive oil in a frying pan over a medium heat. Add the sausages and mushrooms and fry for ten minutes until browned and the sausages are just half cooked. Remove from the pan and, when cool enough to handle, cut the sausages into thick slices. 2. Heat the remaining olive oil in the same pan and fry the bacon and garlic for 2-3 minutes or until the bacon is cooked and the garlic softened. Add the leeks and fry gently for five minutes or until the leeks are softened. 3. Stir in the tomatoes and tomato purée and simmer for five minutes then pour in the beef stock. Return the sausages and mushrooms to the pan and simmer for 5-10 minutes or until the sausages are completely heated through and cooked. 4. Stir in the cannellini beans and kidney beans and heat through. 5. Meanwhile, cook the broccoli in a pan of boiling salted water for 3-4 minutes until tender then drain. 6. Preheat the grill to medium and toast the slices of bread on one side. Turn the toast and sprinkle the other side with the grated cheese then return to the grill until melted and bubbling. 8. Spoon the sausage and bacon one-pot into a warm serving bowl, put the broccoli on top and garnish with parsley. INGREDIENTS... -handful stir-fry vegetables -30g/1oz dried 'instant noodles', seasoning sachet discarded -25g/1oz creamed coconut -2.5cm/1in fresh root ginger, grated -1 garlic clove, grated - vegetable stock cube - lime, juice only -pinch chilli flakes (optional) -1 tsp fish sauce (optional) -salt and freshly ground black pepper -15g/oz cooked chicken strips or cubes of firm tofu small handful coriander, to serve METHOD -Put all the ingredients apart from the chicken and coriander in a heatproof lidded container. -When ready to eat, pour 300ml/10fl oz boiling water over the mixture until just covered. Put the lid on the container and leave for 5 minutes. -Stir well to break up any noodles (caution: the container may be be hot), then put the lid back and leave for 5 minutes. -Add the chicken and stir well. Sprinkle the coriander on top, if using, and serve immediately.

06.01.2022 Friday's Recipe: ADZUKI BEAN SPAGHETTI WITH TOMATO CONCASSÈ Ingredients: 1 Organic Adzuki Bean Spaghetti* 4 Medium Sized Tomatoes, cores removed... 2 Tablespoons Olive Oil 4 Cloves Of Garlic, minced 1 Sprig Of Fresh Oregano, leaves removed and chopped 1/2 Teaspoon Chile Flakes 1 Cup Chicken Or Vegetable Broth 1 Tablespoon Butter 1 Teaspoon Sea Salt 1/2 Teaspoon Ground Black Pepper Freshly Grated Parmesan Cheese Fresh Basil Method: 1. Bring 2 quarts of water to a boil and add the whole tomatoes. Remove after 1-2 minutes, when the skins begin to slide off, saving the water. Transfer the tomatoes to a bowl of ice water. When cool, peel the skins off the tomatoes and cut in half. Discard the seeds and chop the tomatoes into small dice. 2. Place a medium skillet over low heat and add the oil. Add the garlic, herbs, and chili flakes, and cook for 3-4 minutes until the garlic is translucent. Add the chopped tomatoes to the pan and turn the heat up to medium-high. Cook until most of the liquid has cooked out. Add the broth and cook until the sauce is thickened, then stir in the butter. Use the pot of water, boiling, to cook the spaghetti. Gently stir to separate the noodles. Cook on high for 5 minutes, then remove the pasta to the pan of tomato sauce. Stir and/or toss to coat and serve. Garnish with parmesan cheese and fresh basil.

06.01.2022 Friday Recipe: Adzuki Bean Noodles Ingredients: 1 packof Organic Adzuki Bean Spaghetti Shape noodles 4 eggs 1 tsp coconut oil... 4 carrots, spiralized 1 bunch green onions 1-2 oz crushed peanuts 1.5 tsp sesame seeds 1 juice of lime 1 tbsp fish sauce 1 tbsp soy sauce 1 pinch brown sugar 2-3 tbsp warm water 1 tbsp sambal oelek Method: 1. For sauce, mix all ingredients, starting with the juice of the lime and ending with the sambal oelek. Set aside 2. Bring water to boil in pot. Once water is at a rolling boil, add adzuki bean noodles in and stir. Let cook for 5-6 minutes, checking on them to make sure they don't get too done. 3. In a saute pan, heat coconut oil. While coconut oil is heating, scramble eggs in a bowl and pour into sauce pan once oil is heated. Scramble eggs and set aside. 4. Spiralize carrots, chop scallions into thin slices and crush peanuts and set aside. 5. Once noodles are down, strain them, separate them into four bowls and top with ingredients and sauce. Enjoy immediately!

Make your BIRCHER MUESLI extra creamy by adding 1 tbsp of coconut yogurt. Developed around 1900 by Swiss physician Maximilian Bircher-Brenner for his patients, this recipe has transformed from originally more of soaked fresh fruit to oats and is better prepared at night so you don't have to wait for breakfa...st in the mornings. INGREDIENTS: -1 apple -50g/1oz rolled oats -40g/1oz raisins -1 tbsp sunflower seeds -1 tbsp chia seeds -125ml/4fl oz cashew milk (or other plant-based milk) -1 tbsp maple syrup, date syrup or honey (optional) handful of blueberries, raspberries or strawberries (optional) METHOD: -Grate the apple into a large bowl and discard the core. -Add the oats, raisins, seeds and cashew milk and mix well. Add the syrup and berries, if using, and mix again. -Transfer the mixture to an airtight jar, seal and refrigerate for at least 6 hours, or up to 3 days. This allows the oats to absorb the milk. Return to room temperature before serving.
