16.01.2022 Cottage cheese capsicum bake ( all stages ) This was a successful experiment and I will have it for lunch or dinner happily anyday. Was perfect for a cold night. Ingredients ... 150 gm low fat cottage cheese ( used Woolworths select) 1 medium size green capsicum ( chopped weight 150 gm) Salt, 3 cloves garlic minced, paprika , black pepper, oregano. Process - Pre heat oven. Meanwhile , heat a non stick pan on medium heat and add capsicum and garlic together for a min. Add salt , sauté for one more min on medium heat. Add all spices. Mix nicely and on low heat sauté for a final minute. Switch off and let it cool down slightly. In a small baking dish add contents of pan and cottage cheese. Good mix. Pop the dish in oven. Bake on 180 - 200 degrees in a fan forced oven for 8-10 mins checking in between. If you have top grill option. Broil it under top grill for 2 mins. Switch off oven. Let it sit for 5 mins and then take out and enjoy. I really loved this random recipe which totally stemmed out of ‘ need to eat something cheesy’ . Checking in between is important. Cottage cheese is soft so can give out some water but it evaporates while baking, that is why adjust time and let it sit on switched off oven or outside for few mins before you eat. Never thought I can cook with zero oil but it works



10.01.2022 All stages Hard tofu tikka In Greek yoghurt Add tumeric... Salt Pepper and mix together. Dip tofu pieces in the yoghurt mix and add the coated tofu into skewers. Put the skewers into the airfryer for 10 mins. Enjoy with the remaining yoghurt mixture as a dip.

07.01.2022 Stage : 2 Lunch : Zoodles with Cottage Cheese (chinese style) Zucchini contains zero fat, and is high in water and fiber. It also contains significant amounts of vitamins B6, riboflavin, folate, C, and K, and minerals, like potassium and manganese. The summer squash also contains antioxidant and anti-inflammatory phytonutrients. This makes zucchini, also known as courgette, a nutrient-dense food that you should include in your diet.... I’ve taken 150gms Zoodles and just sautéed them with ginger-garlic paste and seasoned with little black pepper & pink Himalayan salt. For chinese style cottage cheese, i took 100gms home made low fat cottage cheese. In a hot pan i added some ginger-garlic paste and roasted it with half a tomato (from my snack allowance) added water and made it into thin gravy. Seasoned it with pink Himalayan salt, black pepper, corriander stems. Added half a sprig of green onion and a quarter of very small green capsicum. Adjusted the flavouring and added cubes of cottage cheese.

02.01.2022 Lunch: Pizza Base Recipe: Use a fork and mix black chick peas flour with some water to a firm dough, dust with flour if needed. Take a small ball of dough and press with your fingers to flatten it. Put it on a girdle over low heat. I had to sprinkle water on top to prevent it from hardening. Sauce: Tomato chutney, recipe posted earlier Chard sauté as topping: Sauté with a little water chopped chard, onions , garlic with a little Himalayan salt and pepper. Putting it all tog...ether. Lay pizza base, spread thin layer of tomato chutney, a think layer of chard sauté and sprinkle with cottage cheese. Crunchy pizza ready to eat. It was delicious. Dinner: Asparagus, cucumber, avocado, tofu salad Sauté chopped asparagus and tofu. Combine all ingredients with Himalayan salt, cilantro and black pepper. Bon Appetit!
