25.01.2022 I went to the supermarket this morning and discovered raspberries are finally on special so I whipped up a batch of my favourite raspberry and coconut muffins. 25.01.2022 Brr, in this cold depressing weather there's nothing better than a cup of tea and a slice of cake to warm up your afternoon. Try my #glutenfree, #refinedsugarfree and #dairyfree Blueberry and Lemon cake, perfect for #diabetics and those following a #keto diet. 3 large eggs 1 cup stevia 1 cup coconut yoghurt... 1/2 cup coconut oil 1 tsp vanilla extract 1/4 tsp salt 3 cups almond meal 2 tsp baking powder 1 medium lemon zest and juice, divided Punnet of blueberries Powdered monk fruit icing sugar to dust the top Beat 2 eggs and 1 cup sugar with whisk attachment on high speed 5 min, or until light in color and thick. Add yoghurt. oil, vanilla, salt and whisk on low speed until well combined. Whisk together the almond meal with baking powder then add to batter 1/3 at a time, whisking to incorporate with each addition. Finally, add lemon juice and zest. Pour half of batter into the prepared springform pan and spread evenly. Top with half of the blueberries. Spread with remaining batter then sprinkle the rest of the blueberries evenly over the top, pushing them slightly into the batter (about halfway). Bake at 180c for 45 mins, or until springy to touch. Serve dusted with powdered sugar.

10.01.2022 Happy Valentines lovers here’s a sweet treat for you to enjoy which is #glutenfree #refinedsugarfree and full of #nutritious ingredients such as magnesium, selenium and probiotics Recipe below Ingredients 150g of sugar free vegan dark choc chips 4 eggs (replace with flax eggs if vegan) 1/2 cup of coconut sugar 1/2 cup of coconut oil... 1 tsp of vanilla bean extract 1 1/2 cups of almond meal 2 tablespoons @mayversfood probiotic peanut butter, warmed Method Preheat oven to 180C fan forced. Grease tin and line with baking paper. Gently melt the chocolate in microwave, stirring occasionally, until melted and smooth. Whisk together the eggs, coconut sugar, coconut oil and vanilla bean extract in a bowl. Add the melted chocolate and whisk until combined. Stir through the almond meal. Pour mixture into prepared pan. Drizzle over the warmed peanut butter and gently run a skewer through the drizzle to create a swirl pattern. Bake for 35 minutes or springy to touch. Cool for 10 minutes before transferring to a wire rack. When completely cool, cut into 16 squares and serve.

09.01.2022 I love using Kefir in my recipes as it's gut boosting and extremely versatile. On a hot summer's day there's nothing better than lemon ice-cream. My kids love this one too and it's a great one for their tummies and is refined sugar free. Here's how you make it: Ingredients 1/2 cup lemon juice ... 2 Tbsp lemon zest 1/2 cup coconut sugar 6 to 8 sprigs fresh thyme 2 cups @tableofplenty Probiotic Kefir Method Add lemon juice, zest, sugar, and thyme to a small saucepan and set over medium heat. Cook until sugar dissolves, 3 to 5 minutes. Remove from heat and let cool to lukewarm, then stir in kefir. If using a self-cooling ice cream churner, pour mixture directly in and churn for 30 to 45 minutes, or until it resembles soft serve. If using a churner that requires you to chill it in advance, be sure to chill the kefir mixture in the fridge for at least 4 hours, or in the freezer for an hour before churning. Transfer to a freezer-safe container and flatten with the back of a spoon. Cover with plastic wrap and freeze until firm, overnight. Set at room temperature for a few minutes before serving.
